Thai Vegetable Green Curry with Jasmine Rice Cakes

Crispy rice cakes too laborious for the result. Served over plain steamed rice would be fine without all the fuss. Added chicken stalk to curry.

Bourbon Fig Compote

My favorite brand of fig spread is discontinued! This recipe is just the replacement I needed. I will never go fig spreadless again. Okay, so I modified the recipe a tiny bit: we used up all our bourbon for Manhattans, but I had some brandy on hand. Whisky, brandy, orange liqueur, Southern Comfort, I bet any of these would work. If you can find LaPanzanella Black Pepper Crackers, spread the fig compote on the cracker with some Beechers Flagship cheese. Mmmmmmm...

Creamy Slow Cooker Potato Cheese Soup

Very good. Used 5 cups chicken stock, I don't use bullion cubes...Cooked on high for 4 hours then crockpot turned automatically to warm :) I used an immersion blender on the entire contents of slow cooker before adding the milk & cheese (3 cups of grated cheese please), this made a nice silky textured soup. I then added diced, cooked red potatoes w/skin on (about 5 small). It was only 20 min extra work to cut & boil them. I added 3 chopped green onions after adding the red potato and bacon. Oh, and it definitely needs more bacon!! I used 10 pieces. The next day for leftovers, I had to add a couple tablespoons chicken stock to each serving to thin it out. Probably not the most heart-healthy recipe but I will definitely make again-my way. Serve with a green salad to feel less guilty ;)

Mango Chicken with Greens

This is fantastic. ALMOST identical to my favorite Mango Chicken dish @my favorite Indian restaurant, which has cilantro in it, which I will add next time. There is a step missing about adding the other half of the mango with the 2nd sliced onion before simmering. Also, I think you can skip the step where you put the chicken in a bag with the smushed ingredients. It works fine to mix the first part of the ingredients in the pan with the melted butter, then add the chicken, unless maybe you're supposed to marinate it in the bag (?) which I don't think it needs because it tasted great without. This works with or without raisins, too.

Buffalochef's Strawberry Rhubarb Pie

Everyone loved this pie. I used "Alan's Pie Crust" recipe for the crust-served it warm with vanilla bean ice cream on the side-delicious!! I needed a recipe that didn't have gelatin as an ingredient and this worked out perfectly!

Everyone loved this pie. I recommend lightly beating the eggs before adding them to the mixture. And I'm not sure if it's because I'm in a low elevation or my oven temp is off, but it took about 60 min to cook the pie when I turned the heat down to 350 degrees. I used "Alan's Pie Crust" recipe for the crust and added rolled oats to the topping just because. Serve it warm with vanilla bean ice cream on the side-delicious!! I needed a recipe that didn't have gelatin as an ingredient and this worked out perfectly!

This recipe is great. The only thing I did differently was that I rolled the dough out really thin like they do in my favorite restaurant. Another time I substituted wheat flour and it turned out just as good.
