About this Cook
Single, working an 8 days on-6 days off shift, which in the freezing Canadian Winter when it is too cold to go outside can be really boring. My goal this winter is to finally start trying all the interesting recipes I've been saving! And finally learn to roast a chicken.
My favorite things to cook
Anything different and interesting, when the weather is cold and crummy I crave soups and stews. I'm trying to master cakes and decorating this year. I'm one of those people that is far too analytical to make things up as I go along - so I like to follow recipes to a "T" and then make changes I know I'll enjoy.
My favorite family cooking traditions
My mother's annual holiday traditions.... We occasionally stray from the norm, but pumpkin squares always show up at Thanksgiving, Sex in a Pan always shows up at Christmas. If something I'm cooking reminds me of her, it makes me enjoy the food just a little bit more.
My cooking triumphs
Mastering my much famous and requested Caramel Squares - they are my crowning achievement.
My cooking tragedies
The first time I made Caramel Squares I accidentally put the base in a cookie sheet (that's what the recipe said!!!) and not in a 9x13 pan, I subsequently had a blonde moment and poured the caramel over top and it went everywhere - my Mom was so pissed. I quite often lose track of how many cups and teaspoons of something I've put in a mix - sometimes it works out okay - sometimes, not so much!

Crab and Shrimp Delight
This was SO. SO. GOOD!!!!! We totally enjoyed it! I did add a scant teaspoon of Old Bay - but would add one heaping teaspoon (or more). I also added a clove of garlic. Okay - also, I used fresh pasta, but I would give it a dunk in boiling water for a couple of minutes so it doesn't absorb as much liquid. One more also! I would add 1/4 cup more milk and 1/4 cup more mayo - just for the extra liquid. Thank you so much for an awesome recipe that we all enjoyed!!!!

Tortilla and Bean Soup
As written - the soup is pretty good! I would make some changes just based on my personal preferences. It does have a spicy little kick too! A little sour cream would reduce that heat level for you though.

Crab-Artichoke Pizza
It was pretty good as written - although I thought it could have used some more mozzarella and a little more red pepper flakes. Thank you!
