I love to cook because I love to create. Creativity is so important, and I love being able to do something that others enjoy and are (hopefully) blessed by, while having the ability to change recipes to suit myself or my 'audience'.
My favorite things to cook
I absolutely love making new recipes, desserts, dairy free foods, and healthy but delicious foods. I love cooking and baking, I love making others happy through it, and I love learning new facts and techniques. Cooking should be fun and creative, and it definitely is for me!
My cooking triumphs
I live and learn... When I can see others happy because of what I've made, then it's a triumph.

Avocado, Tomato and Mango Salsa
Tonight I made chicken, refried bean, and cheese quesadillas for the first time, and my husband requested salsa to go with it. So I looked up salsa recipes from the grocery store and jumped on this one. The only thing I changed was to eliminate the cilantro bc we just hate that herb, and eliminate the onion bc I'm just not an onion fan. Next time I'll only use two cloves of garlic bc it was pretty potent for us. But we both LOVED this salsa with our quesadillas and can't wait to use the salsa again tomorrow with more! This was super yummy! Definitely my favorite homemade salsa yet!!!

Terri's Sloppy Joes
Here's how our conversation went: Me: "how do you like it?" Husband: "it's really good." Me: "as good as the old school kind from the can?" Husband: "way better! We should call it anal-retentive joes, because these are the opposite of sloppy." My husband and I LOVE these! The only changes I made were out of necessity & preference: I used turkey instead of beef bc we gave most beef up. I actually squeezed the onions through my garlic press bc i like the taste of onion but hate the consistency, and the flavor bc of that was so well rounded and perfect. And I used white wine vinegar bc that's what I had. It was super easy, really quick, and so delicious! I had no idea it would be that simple! Well be diving into the leftovers as soon as we have a chance!

I LOVE Colcannon. I keep mine really simple for the best flavor. I mix my potatoes with some chicken stock and mayo for creaminess, and only add chopped boiled cabbage and use small chunks of ham instead of bacon. I LOVE the flavor of the ham in that... a classic dish that is so open for interpretation that it's amazing!
