Puerto Rican Pork Roast

Excellent Pork! I did add some Apple Cider Vinegar to the paste and cut the amount of Salt & Pepper to 1/8" cup each. I also added some Onion powder and Cumin to it. Had a 8 LB picnic.Great recipe.

Authentic Louisiana Red Beans and Rice

One word: EXCELLENT!!! I've been to New Orleans and Cajun country several times and this is about as good as it gets. I prepared this for my family and friends and everyone loved it. A sure keeper for sure. Thanks for a great recipe!

Roast Sticky Chicken-Rotisserie Style

I used this rub IN my rotisserie. I did make some changes. I added ground Sage and Rosemary in place of the Thyme, and upped the amount of Onion Powder.I reduced the amount of Salt since I used only One Chicken. Very good rub. I gave it only 4 stars due to the fact that I changed some of the ingredients. My lady liked the Chicken very much.Good recipe!

Excellent. I did make some changes since I didn't have any Mint on hand. I added toasted ground Caraway and Fennel seeds to the recipe. I used New Mexico Chiles that are somewhat mild and a small handfull of Arbol Chiles to turn up the heat and omitted the Cilantro. I upped the Cumin and Coriander since I love very spicy. Great on anything, especially grilled foods! THX!

Best Steak Marinade in Existence

I made some changes. I used 4 cloves of fresh Garlic, didn't have any Basil, but added 1Tblsp of dried Rosemary and a heaping Tsp of dried Sage.Very tasty, and I grilled fatty Sizzle Steaks over Charcoal. Was delicious!

Antipasto Pasta Salad

Very delicious Pasta Salad. I made some slight changes. I used the Seashell Pasta, I also sliced some Pepperoncini Peppers, and chopped some marinated Artichoke Hearts in it. I used Red Wine Vinegar instead of Balsamic in the recipe and "Upped" the amount of the dressing. My lady and I attended a State Park Potluck Luncheon since we are volunteers and the Pasta Salad was a HUGE hit. I added the dressing 15 minutes before it was served and it was nice and moist and the Fresh Olive Oil and Red Wine Vinegar made it perfect. A keeper for sure..Thanks!

Oven Baked Herb Chicken

I didn't have the Cheese style dry dressing, but used a package of Italian Good Seasons .7 oz package. I did not use the Flour. I mixed the Dressing mix with Grated Parmesan Cheese and 1 1/2 cups of Panko Bread crumbs. I mixed some Olive Oil with the butter lightly melted, and coated the Breasts in the combination. I then shook each Breast in a bag with the Dressing/Crumb mixture. I lightly drizzed more of the Oil/Butter over the tops of the Breasts. They turned out Super Juicy and lightly crunchy using the Panko Crumbs and it was Delicious! My lady liked it very much! Thanks.

Calamari in Red Wine and Tomato Sauce

Like others I used Frozen Squid Rings. I made a Marinara from fresh Roma Tomatoes and added some sliced Mushrooms. I used Syrah Red Wine due to its dryness and bold complexity.I upped the Garlic and Lemon Juice, and added some fresh Parsley when the sauce was done. I also cooked the Squid for 10-15 minutes, just right.The sauce was simmered for about an hour before I added the Squid.I added some of the lemon juice to the sauce before I served it. I served this over Linguine cooked "Al Dente" with crusty bread and the Syrah Wine. It was delicious!

Easy and Delicious Chicken and Rice Casserole

Very Good recipe. However I customized it by using cut up Chicken Quarters-Drumstcks,Thighs seasoned with Pepper,and Chicken rub. I mixed the Cream of Chicken soup with Vegetable Broth and a small amount of Milk. I minced about a 1/4 Red Onion and added to the soup mix. Stirred in a package of Saffron Yellow Rice. Poured 2/3rds of the mixture in a buttered 9 X 13" Pyrex dish. Arranged the Chicken on top and put about 1 1/2 cups of Frozen Peas around the Chicken and poured the remainder of the soup mixture over all. Baked it for 1 1/2 hrs covered and it was very delicious. My little lady loved it. The Saffron Rice and Red Onion added character to the dish.

Beef Stew III

I used 2 lbs of Stew meat and seasoned it with Chicago Steak seasoning and Sage, and Thick style Worcestershire Sauce.I used fat free,low sodium Beef broth.Cut up 3 carrots and Celery stalks. Cut up 2 Large Red Potatoes in 1"X 1" cubes.Added 1/2 Cup Hearty Red Wine to the broth and Bay leaf while stewing prior to adding the Celery,Potatoes and Carrots.Once the meat was tender added the vegs. and cooked for an additional 40 Minutes. Was delicious. Served with a Green leafy Salad and Red Wine with crusty bread. Great comfort food for a chilly day. Thanks...

The Best Meatballs

Great Meatballs. I did as some said and baked them to render the fat, and used 80% lean Ground Beef as that was what I had. I added fine chopped Fresh Spinach and more Garlic. I used Whole Wheat Bread and soaked the Bread in 3 Tablespoons of Milk. Added the soaked bread into the mixture with Italian Herbs. Slowly simmered into the sauce with Hearty Red Wine and a 1/4 cup of Olive Oil. The result was a great rich sauce. With Garlic bread and a Green Leafy salad was excellent, and of course we had a very dry Shiraz Wine with the meal. Keeper recipe. Thanks!

Baked Bar-be-Que Chicken

Very juicy chicken. I made this for myself since the little lady is in Fla visiting relatives. I used 6 Drumsticks. I added Onion Powder and Smoked Spanish Paprika with Black Pepper to the Garlic powder. Gave it a smoky bold flavor.Had it with a leafy green salad with Blue Cheese Dressing. The tang of the BBQ sauce and BC dressing was great.There were no leftovers. Will make it again.

Creamy Au Gratin Potatoes

I doubled the recipe and its a side dish for Xmas. I chopped the Onion and used Half & Half. I used White Sharp Vermont Cheddar cheese and added more for extra creaminess. I poured some of the sauce between the layers and added chopped fresh parsley. The last 10 minutes I removed the Aluminum foil and let the top brown slightly. Everyone loved it! Thanks for the keeper recipe..

Quick and Easy Home Fries

Very good recipe. I added chopped sweet onion to the oil and butter until transparent, then added the potatoes. I put Garlic powder and a hefty pinch of ground Cayenne Pepper.Had this with a Strip Steak for breakfast. Great...

Aimee's Quick Chicken

Very good recipe. I used Honey Dijon Mustard along with the Teriyaki. I slightly cooked the bacon strips in the microwave to render some of the salt and fat. Then wrapped the Breasts with the bacon while it was still pliable. Came out very good and the bacon was not overcooked in a 400 degree oven. I also put the cheese on the chicken before I applied the bacon. Very tasty and juicy. Served it with steamed Collard Greens. My lady loved it!

Buttermilk-Battered Calamari

I soaked the squid for 2 hours, and added 2 Tsp Old Bay seasoning, and 2 Tsp Smoked Paprika to the 2 cups of Flour. Made it wonderfully spicy and smoky tasting. Squeeze fresh lemon wedges over it before you enjoy this great recipe!

Spinach Enchiladas Verde

Very good. Take the corn tortillas and lightly fry in grapeseed oil for about 20 seconds. They will hold their shape when filling and wrapping, the oil is actually heart healthy, and has no taste. Added minced garlic to the salsa mix and some fresh Cilantro.

Southwestern Pasta Salad

Very good recipe. I used canned beans,canned chipotle corn, and canned diced green chiles, canned diced tomatoes with roasted garlic and onions.Added 4 cloves pressed garlic. Used Chipotle powder with a good amount of ground cumin.Did not have Cilantro at the time so I used a handful of chopped Parsley.Very tasty.Served it with Charcoal Grilled Chicken Thighs in a BBQ marinade. Will make it again!

Spicy Honey Mustard Pork Roast

I used a 4 1/2 Boneless Pork Loin Roast, put the Honey Mustard mix on the night before so all the flavors married together. I wrapped in bacon and roasted for 1 hour on a wire rack in a roasting pan. I then covered with foil and roasted for another hour and a half. It was super moist and tender, with plenty of tasty drippings for gravy. Served with mashed potatoes with the gravy. My guests loved it!
