Baked Cod

This was pretty good. I didn't have seasoned stuffing croutons so I used 1 c panko with a little salt and pepper and 1/2 T dried parsley. For the ranch dressing I used the ranch seasoning from BEC on this site with 1/4 c milk ( buttermilk was old) and 1/4 c and 1 T of reduced fat mayo to get a dressing consistency. What was odd was that after the fish was baked it tasted like stuffing even though I didn't have stuffing croutons. Maybe it was the thyme in the ranch I don't know. All in all it was good.

Quick Chili I

This was really tasty! I go to a community college for culinary classes and we had a soup practical today and we had to make chili and another soup of our choice. I did everything to the t, except I forgot about the pinto and kidney beans. So I split a can of cannelini beans in half since I was making minestrone as well. My teacher gave me a 93 saying it was thick, chunky, rich and meaty. Thanks so much for this recipe! I think I'll use this recipe forever!

Easy Apple Crisp

This was really good! I followed Jen Marshall's amounts of the topping, and it turned out good. The only problem was, that I felt it made a TON of topping! Also I found the nutmeg too strong for my taste. So next time I will use only a pinch of nutmeg and half the crisp topping.

Fluffy Hot Chocolate

This was good! It was a little too sweet, so next time I will cut down the sugar. No need for store bought when you can easily make it like this! Does anyone have an idea of how you could do this in the microwave?

Asian Tuna Patties

I was hesitant to try this recipe because I've read the reviews and alot of them said although the texture was good, the flavor could've been improved. So i measured out 2 T of store bought teriyaki sauce and doctored it up with fresh grated ginger, squeezes of fresh orange and lemon juice, some honey, brown sugar, and a few shakes of garlic powder. They were pretty good. Even when I thought my dad wouldn't like them, he loved them!!

Pineapple Jupiter

This was pretty good. I liked the combo of sweetness from the banana ( mine was really ripe ), and the slight tartness of the pineapple juice. I know it said sprinkle cinnamon to taste which was optional. I did sprinkle some, but I think I'd like it more without the cinnamon. Also I think it was too liquidy. So next time I'll omit the cinnamon and add more ice cubes and less liquid.

Banana Crumb Muffins

These were delicious! My co-workers and mother loved them ( dad doesn't like banana baked goods ). Since the butter was melted, I substituted canola oil and that turned out fine. I also added some oats to the crumb topping because I LOVE a crumb topping made with oats. Will make these again. I'd be interested in trying the "Healthier Banana Crumb Muffins."

Yummy Blueberry Cobbler

I made this summer 2012 and I just now reviewed it! My dad says this one is a keeper and he's picky about the fruits he will eat. I love when I make recipes and he says that; you know it's good then. Wouldn't change a thing.

Wheat Crackers

I followed the recipe as stated and I had to add a little bit more water than it called for. Something I did must've been wrong, because I was hoping these would have a good flavor and be flaky, but they were bland and rock hard. I could add spices and herbs, but I think I'll just look for another recipe. Sorry

Chewy Chocolate Cookies I

I always read the reviews on recipes before I try them, yet i usually prepare it the way it says the 1st time & then go back the 2nd time & tweak it. These reviews said to add a little more flour, but they came out perfect for me the 1st time; i wouldn't change it the 2nd time. They were delicious! The first time i added white chocolate chips & macadamia nuts to half the dough & semisweet to the other half. We prefered semisweet.

Frosted Banana Bars

This was delicious! I was subscribed to Taste of Home's Healthy Cooking, and in one of the issues there was a healthy recipe for this. This one was so much more moist though. I used red. fat vanilla yogurt for the sour cream and only used 1 c sugar like another reviewer suggested. Also, I made a red. fat cream cheese icing and it was delicious on this. Thanks for a wonderful recipe deltaj!

Peach Cobbler for Two

This was delicious! Some cobblers I've made in the past, the dough was some what dry. This topping was moist and a beautiful golden brown and a wonderful flavor! Will be making these again except with different fruit! NOTE: I had the same problem others had in that I needed to double the cobbler recipe.

Mom's Chocolate Chip Cookies

Before I made these I read the reviews on them like I do for all recipes I want to make. One reviewer said that she used 1/2 c butter instead of 1 c and that they were still moist without all of the fat. I don't know what I did wrong there, but that definately did not work for me. Sometimes you cannot make things with less fat. So the second time, I used the whole cup of butter and a 1/2 t of salt and they were delicious! By the way does anyone know what would happen if you used the cook n serve instead of the instant?

Bacon Cheese Muffins

I'm not quite sure why when other reviewers made this, that they had a floury taste because mine didn't. These were pretty good although I will add more garlic next time and either reduce or eliminate sugar and maybe use cooled melted butter instead of the oil. Could someone please explain why this recipe calls for sugar anyway?

Vegan Davy Crockett Bars

These were very close to the "non-vegan" recipe submitted by Kimberly32. I don't usually read all of the reviews on recipes, I probably should though. I made these tonight, and when I poured in my oil into the dry, even after mixing, it almost resembled a crisp topping w/ chocolate chips and the chocolate chip cookie mixes you get in the bag. So I went to read on the reviews about what to do & a common theme was reducing sugars and oils and using 1/4- 1/2 c applesauce. So I added 1/2 c applesauce, & it still seemed a little dry to me, but I put it in the pan anyway and hoped it would turn out. I added the regular 3/4 c oil, and 1/2 c applesauce. I also reduced the sugars down to 1/2 c each. Next time I plan on 1/4 c oil to 1/2 c applesauce and just 1/4 c of each of the sugars. This was a good recipe! When my mom found out it was vegan, she was apprehensive. After they baked and cooled she ate one, and then determined they weren't bad after all. So thanks so much for this recipe!
