Red Velvet Cake I

Reviewed: Oct. 8, 2010
The cake itself was good, although I followed other reviewers advice and subsitituted 1 cup of oil for the shortening and increased the sugar to 2 cups. I made the icing, and was very disappointed. I followed the recipe to the letter, only to find it was a soupy mixture that didn't thicken despite every effort. Luckily I had ingredients for cream cheese icing on had, although it's not my personal favorite. Great cake, awful icing!

Southwest Chicken

Kind of bland. I think with a a heavier hand for spices, this dish would be quite goo.

Slow Cooker Lime Chicken with Rice

Reviewed: Feb. 2, 2010
Kind of Bland. It just tasted like limes. The chicken was tender, but I felt it needed something more.

Hot Cocoa Mix in a Jar

Reviewed: Jan. 20, 2010
Best mix ever. I have TONS of people who ask for this every christmas! I did, however, add 1/3 cup of powdered vanilla coffee creamer. I felt this added a touch of vanilla that served to complement the flavor.

Beezie's Black Bean Soup

Reviewed: Oct. 19, 2009
I thought the recipes needed a bit more spice. By substituting 1 habanero and 1 dried chipotle pepper in place of the fresh jalepenos, I found that I could get the amount of spice I enjoyed. Overall though, this recipe is easy and delicious. I use the leftovers in place of a side of refried beans in other mexican inspired dishes. The recipe is cheap and easy to make. Thanks!

Baked Apple Pudding

Reviewed: Aug. 12, 2009
This recipe is amazing! To make the recipe healthier, I substituted apple sauce for the butter and used splenda (the baking blend) instead of sugar. My boyfriend and I can't get enough!

Orange Beef-Style Tofu Stir-Fry

Reviewed: Apr. 30, 2009
This recipe is quick and delicious! Instead of vegetable oil, i used sesame oil. It gives it a great flavor. A tip on preparing the tofu: drain it well, and place on paper towels, press with a heavy weight to get out as much of the moisture as possible. Then cook. Great recipe though!
