Chocolate Truffle Cookies

Reviewed: Dec. 17, 2013
I've made these at Christmastime for many years and they are always a favorite, exactly as written! They are easy to make and always turn out perfect, so chocolatey and decadent. *I saw the negative review about these getting hard on the counter, which made me chuckle since, in my experience, ALL homemade cookies get stale and hard on the counter. I store them in the fridge or freezer, but if you have to keep them on the counter, put a slice of bread in with them (the bread will get hard but the cookies will stay soft).

Pie Crust IV

Reviewed: Feb. 25, 2013
I make this often and it is always wonderful! I prefer butter over shortening and oftentimes use a mixture of fresh ground pastry flour with some organic white flour, but either way, it's a perfect pie crust...simple, flaky and delicious. Thank you for this wonderful recipe!

Buttermilk Pound Cake II

Reviewed: Apr. 2, 2012
Absolutely delicious! I followed some other reviewers suggestions and doubled the vanilla and added 1/2 cup of sour cream. It was moist with a wonderful flavor and a flaky crust. Perfect pound cake!

Iced Pumpkin Cookies

Reviewed: Nov. 7, 2011
Though I am a skilled baker, I've never made pumpkin cookies. These did not disappoint! They are soft, delicious and perfectly spiced. I doubled the recipe but not the glaze and, since I don't want to feed my kids an overly sugar-laden cookie, this was a good call. Instead of covering the whole cookie in icing, which they don't need at all, we just striped and swirled some on the top of each (a perfect job for little ones). We still had half of the glaze leftover, which just means I have to make another batch of cookies, I guess! This is a perfect cookie, I wouldn't change a thing!

Roasted Vegetables

Reviewed: Oct. 9, 2011
This was absolutely delicious!! I made it with 3 kinds of potatoes, onions and beets (since that's what I had on hand), fresh thyme and dried rosemary. Seriously, this was the best roasted veggie dish I've ever made. Thank you for such a simple and outstanding recipe!

Sausage Smothered in Red Cabbage

Reviewed: Aug. 15, 2011
Very easy and delicious dish! The only changes I made were salting to taste since some people said it was too salty. I also used balsamic vinegar instead of wine vinegar. It was simple to make and tasted wonderful. I made it alongside spaetzle and the cabbage combined with the spaetzle was really delicious!

Grilled Asian Chicken

Reviewed: Apr. 27, 2011
This marinade is excellent! I did not make any changes to the recipe except to stir-fry my marinated chicken strips. I then added them to a peanutty pasta dish and it was a very good combination. Thank you for this recipe, it's a definite keeper!

Grandmother's Buttermilk Cornbread

Reviewed: Jun. 14, 2010
This is the BEST cornbread we have ever had! It is simple and never fails. My husband is a Texan who does not like sweet cornbread and he says this is now his all time favorite. He even wants me to make one and frost it for his birthday! Thank you Bethany!

Old-Fashioned Vanilla Pudding

Reviewed: Apr. 15, 2010
This recipe is super easy and really wonderful! I do make a couple of small changes...I reduce the sugar to 1 1/2 T per cup of milk, instead of 2, as it was a little too sweet for us otherwise. And I use 1 egg yolk per 2 cups of milk (I make big pots of this!) since I don't want to use up so many eggs, and it is terrific, though I imagine it is great with all of them too. Thanks, Katie, for a great pudding recipe!

Oatmeal Peanut Butter Cookies III

Reviewed: Jan. 29, 2010
We made this without the filling and they are delicious! I followed another reviewer's suggestion to take them out of the oven at exactly 10 minutes, even if they don't look done, and am glad I did. They are chewy and moist, which is just what I wanted. Yum!

Light, Crisp Waffles

Reviewed: Jan. 2, 2010
The BEST waffles ever! I have been making these for years and am just now leaving a review. I have always made them with the homemade buttermilk mixture (lemon juice in the milk) and it is excellent. I have also successfully used fresh ground whole wheat and soaked it overnight (if you want to vastly increase the health factor) and nobody can tell the difference - they are perfect! Thanks for a great recipe!

Easy Broccoli Quiche

Reviewed: Aug. 19, 2009
I have made this recipe about 40 times and it is always delicious! As to any negative reviews, seems these people are subbing in frozen broccoli. Don't do it! Buy fresh, preferably organic, and make the recipe exactly as written. The only change I ever have to make is to add on some cooking time. Mine usually takes closer to an hour. And it does make a lot, so you'll need a deep dish pie pan. Otherwise, it is perfect!

Chocolate Cakes with Liquid Centers

Reviewed: Mar. 7, 2009
This is my new favorite dessert!! It is incredible! It is so easy to make, done in 10 minutes, and the best part is that you have half delicious chocolate cake and half warm, gooey chocolate. We top it with a scoop of Haagen Dazs vanilla ice cream (not that it needs it) and, oh my gosh, it is heaven in a bowl! The only caution I would is that I think you should always use a good quality chocolate. We use Ghiradelli 60% cocoa chips (just over 1/2 cup) and it is wonderful. I think if you use cheap chocolate (like Hershey's), you will end up with a whole different dessert. Seriously Russ, I'd drive over and kiss you if I could! Thank you for such a simple but decadent dessert.

Zucchini Bread IV

Reviewed: Jan. 6, 2009
Excellent! This bread is moist and delicious and it is always terrific to get two loaves. I have made it many, many times, just as the recipe states, and it is always perfect. I also sub 1 cup of whole wheat flour much of the time and you can't tell the difference. So good!

Roast Pork with Onion Stuffing

Reviewed: Dec. 27, 2008
I can't believe how delicious, and easy, this recipe is! If I could give it 10 stars, I would. The pork was moist and tasty and the onion stuffing was excellent (I could have eaten that alone!). The only change I made was to add a little white wine to the bottom of the pan before putting the roast in the oven. It made a wonderful gravy. This is the best pork roast we have ever tasted. Thank you Catherine Lee!

Shortbread Cookies II

Reviewed: Dec. 17, 2008
I was really looking forward to these cookies but found them to be so bland. I am not into super sweet, but had hoped that they would be like shortbread that I had eaten before (like Walkers). Both my husband and I agree, these need more sugar.
