I've made this dish for the past three years. I take the quick route and use a can of Goya or Bush's black-eyed peas. This year, I used left-over ham that I cut into bite-sized chunks. I used a 1/2 cup of chopped mixed peppers (red, yellow, and green), 1/4 cup red onion and 1/4 cup yellow onion, 1 celery stalk chopped, 1 tsp crushed red pepper flakes, 2 tsp minced garlic, 1 tsp garlic powder, sea salt and fresh ground pepper, and a few dashes of hot sauce. I cooked the veggies in 1 tbsp of olive oil. Then added the spices, ham, and peas and let it simmer while I boiled a bag of Uncle Ben's brown rice (10-12 minutes). Even my 7 yr old loves this dish. Tastes great with cornbread! And don't forget the collard greens!

To Die For Blueberry Muffins

Thank you for the recipe. It's a keeper!*Update* When I have buttermilk, I use that instead of regular milk. I sometimes add a tsp vanilla extract,a couple dashes of cinnamon, and/or a tbsp of cocoa powder depends on the batter. I have used this recipe as a base to make banana chocolate chip, apple cinnamon, and cherry chocolate chip muffins. They were delicious. Thanks again!

Chocolate Pretzel Rings

I make these every Christmas Eve. My mom and sister make sure to remind me whenever I forget. I'm going to surprise them this year and make the Turtle version in addition to these.

Fluffy Pancakes

I really like the "Good Old Fashion Pancakes" recipe from this site, but it makes too many pancakes. I wanted a similar recipe with out converting the measurements and this is it. I used 1 1/2 Tbsp un-salted butter instead of shortening and added 1 tsp vanilla. They were sooooo fluffy and yummy! Thanks for submitting this recipe Eugene. It's the best!!

Good Old Fashioned Pancakes

I just finished making these pancakes....Yum! My pancakes were VERY light and fluffy. I could not follow the recipe exactly because I did not have any eggs. I used All Whites egg whites because that's what I had in the fridge. After measuring the amount of egg whites needed, I let it sit, along with the milk and melted butter until it was room temperature. (I recommend unsalted butter, I don't remember if that was stated in the original recipe.) I sifted the flour once and then added the sugar, salt and baking powder and sifted them all, just once. I folded the egg whites into the flour mixture, added the melted butter, milk and 1/2 tsp vanilla. I made 1/2 the pancakes plain and then gently added some blueberries to the batter and made some blueberry pancakes. Thanks for the recipe. It was extremely easy to follow and the pancakes were delicious.
