Absolutely Fabulous Greek/House Dressing

Delicious! I didn't have dijon so I added a few tablespoons of lemon juice and this turned out awesome! I'm going to try marinating chicken for kabobs in the remaining dressing.

Artichoke & Spinach Dip Restaurant Style

You would not believe how easy this recipe is and how many compliements you'll get for it. I've made it a handful of times and love it as-is, but also love it with a few roasted garlic cloves. Not at all healthy, but sooooo delicious.

Chicken Noodle Soup II

I used matzah balls instead of noodles but really enjoyed the soup none the less. I followed most of the recommendations of not adding salt and using reduced sodium broth and it turned out perfect.

Rosemary Pasta in Roasted Garlic Sauce

This was good, but not fantastically good. I added an extra clove of garlic, halved grape tomatoes, and a splash of white wine. Quick and easy, great rosemary taste. I'd make it again, and judging by my husband's FOUR servings, he'd like it again.

Barbecued Beef

I made this for St. Patrick's Day because the 4 stores near me were all out of corned beef & my husband opted for bbq beef as his 2nd choice. Obviously I did not serve this with cabbage... Delicious! I'm not a huge bbq beef fan, but this was good. My husband had THIRDS and was excited to take the leftovers to work for lunch. I served it with lemon-almond-garlic green beans, salad & scalloped potatoes.

Baked Potato Soup V

Heavenly! I followed the recipe for the most part, but sauteed an onion and added that to the flour, margarine & milk mixture, and later added low fat cheese, scallions, bacon & a tablespoon of low fat sour cream. This soup does need a bit of additional salt & pepper. I used skim milk to cut down on some of the fat, and replaced the butter with margarine (reduced the amount, too). It was so good that I had it for breakfast the following day!

Tiramisu Layer Cake

OMG. This cake was a bit of work but totally worth it. I am generally an awful baker, but this turned out to be bakery-quality! I topped the cake with lots of whipped cream, chocolate shavings, and cookie crumbs.

Paprika Chicken with Sour Cream Gravy

This was good, not great. I could see this becoming a good starting off point, especially in the winter and when I'm craving creamy food. My husband didn't care for it as much, mainly because he is a bit fat-phobic and thinks even low-fat sour cream is cursed.

Coconut Cream Cake I

I completely messed up the recipe & it was still FABULOUS! (I accidentally poured the whipping cream INTO the cake, along with the cream and extract). It was super moist, but a total nightmare to get out of the pan. I followed the directions on the cake mix box and think that this would have looked as good as it tasted if I hadn't screwed up the recipe. The frosting is yummy--I added extra coconut extract to it and topped it with flaked coconut.

Slow-Cooker Chicken Tortilla Soup

This is a great soup! I made a few adjustments and spiced it up a bit, and it turned out wonderfully. I didn't have canned tomatoes, so I added hot salsa instead. I also added extra enchilada sauce (medium), chipotle pepper (about 2 t), a dash of spicy taco sauce, extra cilantro, and lime juice. I topped each bowl with avacados, sour cream, chips, and white onion. Fantastic and sooo easy!

California Cheesy Black Bean Dip

Cheesy and yummy! I used a can of refried black beans and added spicy jack cheese instead of mozzarella and really liked this. Super easy to make, lots of fiber & protein, and not *too* bad for you if you use low fat cheese and sour cream.

Three Bean Slow Burn Chili

Spicy but soooo good! My husband gobbled this up. I used sirloin for the meat, and topped it with onions, cheese and sour cream, and served it with cheese quesadillas. Delicious!

Chicken Breasts in Caper Cream Sauce

This was good, but the sauce was a bit too creamy for us. I also changed how I cooked the chicken: I dipped it in flour, egg & planko bread crumbs, cooked the chicken in olive oil for 3 minutes & baked for 7 minutes. I also added lemon juice to the caper sauce. In the future, I'd use half and half to cut back on the calories and fat. I'll make this again. Thanks.

Hearty Homemade Tomato Sauce

Very good! I changed the recipe a bit due to a lack of ingredients on hand. No carrots, less celery. I also added a bit of red wine and halved cherry tomatoes, and served it over spaghetti squash, topped with feta cheese.
