Asian Lettuce Wraps

Reviewed: Jan. 28, 2011
Sooooo good. Just writing this review is making my mouth water. I didn't have some of the ingredients like the ginger but I made due and it was so good. I froze the rest of the filling and it kept well.

Taco Salad III

This was a hit. I roasted the peppers and onions and I let out the dressing and topped it with a little bit of nacho cheese. It was quite well received.

Chuck's Favorite Mac and Cheese

Delicious! Changes I made were to add about a half a cup of cream (The left overs can be quite dry otherwise) and mix some parmesean and smoked paprika with the topping

Sweet Potato Pineapple Casserole

Reviewed: Jan. 15, 2010
Excelent!! I really wanted to make something different for my first thanksgiving as a mom with a familyof my own. I topped the sweet potatos with praline topping and it was great. With the left overs my mom made a "pumpkin bread" but subsituted the pumpkin for the sweet potatos and it was amazing. Try it. You'll love it ;)

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Jan. 15, 2010
Delicious. I made this for my first thanks giving dinner in my own home and trumped all the stffing I've ever had. Everyone was quite impressed. I doubled te fruit the second time however and will do so from now on. Also, a local market had chicken apple brots and I de-cased those and used them instead and I think that worked out wonderfully. I liked this recipe as a dressing instead of a stuffing.

Moroccan Chicken and Whole Grain Couscous

Reviewed: Jul. 9, 2009
Awesome recipe. I worked for years at a gourmet Moroccan recipe and my family said I out-did the restaurant. I did mix it up a bit though. First I added about five carrots and an extra zucchini two small potatoes and a large onion instead. I also added about a half cup of raisins. I didn't add the chicken because my mom's vegan but instead halved a couple cornish hens, seasoned them with the same seasonings used in the recipe, and roasted them in the oven. This made for a more pleasing presentation, I think. I increased the amount of seasonings probably by at least 30% and the extra veggies helped soak up a lot of the liquid so it wasn't too soupie. For nutritional reasons my mother suggested adding a bit of kale so I'll probably try that next time. All in all a delightful and healthy meal.

Corned Beef and Cabbage

Reviewed: Jan. 27, 2009
Great recipe! I didn't have baby carrots or fresh garlic so I used minced garlic and some garlic powder and just made do with the rest. I also put the meat on the bottom instead and boiled the water separately before adding it to the slow cooker. But the recepe's definately a keeper. Thanks!
