Burrito Pie

This was just OK. I followed the advice of others and didn't mix the beans with the meat, and double layered the tortillas. I feel that this recipe was more work then I wanted to put into it. Mainly because it tastes just like burritos. A regular traditional burrito is MUCH easier to make and tastes just a yummy.

Berry Oatmeal Muffins

I don't know what I did wrong with this recipe but the muffins turned out very dense (yes I added baking powder). I did add a bit more oatmeal, so maybe that was the problem?? Also I apparently didn't prepare the muffin cups properly because the muffins really stuck to the cups. I'm not sure that I will attempt them again. I didn't want to rate the recipe bad because I believe it was "operator error", not the recipe ; )~

Ken's Minestrone Soup

This soup turned out very flavorful! The only variation from the recipe is that I added a BIG pinch of each herb versus just a pinch. I also threw in some onion and garlic powder for the heck of it. My pot wasn't quite big enough so I left out some of the water, brought it to a boil and then transferred it to my crock pot adding additional water. I let it simmer for a couple hours. I took the advice of another review and added some mini pasta shells. I am not quite sure why other reviewers indicate that the soup was too watery. If it was thick it would be more like a stew! Bottom line, we loved this soup!!! And YES it does taste a lot like the minestrone at Olive Garden!

Peppermint Meringues

These were awesome! I added them to the gift of Christmas treats that I gave to friends and family and they were a great addition to all the other rich treats I made. I altered the recipe slightly by adding peppermint extract. I followed the suggestions and folded the extract in after the egg whites were whipped. I didn't do that the first time and the egg whites fell flat. It doesn't seem like the recipe makes as much as it says, but it really does. I also put the mixture in a baggie, cut the corner, and piped it through onto the wax paper and each one came out beautiful.

Crispy Rice Candy

Yummy treats! I made these to be included with many other treats that I gave for Christmas gifts. I LOVED them!! Such a great combo of ingredients for the holidays.

Lemon Crisps

I made these little delights to be included in the treats that I made for gifts for Christmas. Everyone just loved them! I also drizzled the powdered sugar icing over them so they looked beautiful as well. VERY EASY RECIPE! I followed the recipe as posted and was very pleasantly surprised!

Baked Ziti I

This was so yummy! It makes ALOT, so invite your friends! I made a few changes based on others suggestions by mixing the finished sauce and meat mixture with the ziti so that when it baked the sauce was disbursed evenly. I used two different types of sauce, 5 cheese Bertelloni and Sockarooni. Added some italian seasoning, minced garlic, seasoned salt with the beef/onion mixture. The sour cream was sooooo much more tasty then traditional ricotta. I also sprayed my 10x14 glass dish with olive oil cooking spray rather then butter. Eat up!
