About this Cook
I am retired and newly married. I have been cooking since I was 6 years old. I enjoy cooking for my wife who enjoys all kinds of foods. The people she works are always commenting about the left overs she brings to work. She gives me reason and purpose to try new things and keep the Dr. Office wondering what she will bring next.
My favorite things to cook
There are so many, but being able to go to the garden and grab stuff and cook is a blast. I enjoy Cajun, Mexican, and stir frying. I have a few things I like less then others but generally like all foods. Love trying something new. One of my favorite dishes is Cajun Pork Roast. It takes all day to cook, and filles the house with the wonderful smell of the roast to be enjoyed all day.
My favorite family cooking traditions
POTATOES!! Boy can you do a lot of things with potatoes. Our family is big on growing our own veggies. Starting with wild asparagus in the spring right through the fall with squash, potatoes and all the other wonderful fall harvest. A walk in the garden ends up in a wonderful healthy meal.
My cooking triumphs
I cooked dinner for 150 people in one sitting. It was a blast and the food was very good. It was very tasty bbq chicken and potatoes cooked over a charcole fire. Not as easy as it sounds, but a blast to do. I am also one of the cooks that cook Christmas Dinner for 125 people on Christmas Day at the Oconto Falls Community Center.
My cooking tragedies
I loved my grandmothers Cracklen Cookies. These are made from the crisp meat from rendering lard. I used her recipes but they were not like them at all. They were so hard and bad the dog wouldn't eat them. I think they are still laying in the barn yard somewhere.

Saucy Brussels Sprouts
Was looking for a recipe to use my Brussels sprouts for Thanksgiving. I have one that I had been making for the last several years that people love. I came across this one and just made it to see if this one would work. It looked simple to make, and it was. As far as how I liked it, WOW!!! Simple, tastie, and I can make a large quanity and keep it warm in a crock pot while I cook the rest of the meal. The only thing I did different was I added a clove of garlic, and used red onion. It was very good and well worth making. I am sure there will be another Brussels Sprouts recipe that people will want me to make for them. Thank you Margery.

Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce
I made this for Christmas Eve Dinner with all the family there. I had never made Prime Rib before and it turned out better than I could have hoped for. Fantastic flavor, and it was easy. I used dried Rosemary from my garden because I didn't have fresh, and that worked just fine. I made the mushrooms to go along with the rib and they turned out very good also, but took away from the great taste of the meat. I ate the mushrooms on the side and they were a good side dish. I will make this one again for sure.

Chicken Asparagus Roll-Ups
Very nice and easy to make. Make a double batch and have fantastic left overs to take to work. Loved it.
