Basic Ham and Bean Soup

Pretty good! I made my own stock by boiling the hambone and veggie ends for an hour + in the water. I was leery of the mustard, but it was subtle and quite nice. I liked this dish quite a bit, but I was the only one in the family to get seconds of it, hence the 4 stars. Thanks!

Spiced Sweet Roasted Red Pepper Hummus

Fantastic! I have made the other hi-rated Roasted Red Pepper Hummus on this site, and this is FAR superior. I was looking for a replacement to the Trader Joe's version that they no longer sell, and this was exactly it. I love it! Oh, I did add a tablespoon of oil to get the consistency that I wanted, but that is my only modification. I've made it twice now, and it's about 1 juiced lemon and one big scoop of tahini... that makes it even easier. Thanks!

Chicken Pot Pie III

My first foray into the pot pie - this was very good! I made my own crust (allrecipes 'pot pie crust') and this filled a 11x7 dish perfectly. I think that the cream of celery flavor (I have never really used it in anything) came through a bit too strongly for me... I did use the Healthy Request version. I don't think it was the thyme, though I did reduce it a bit. I'll use this as a template for sure, but I don't care much for the full fat (+MSG) cream of potato that I used. Considering the amount of prep time and quality of product, this was a solid four stars and a great beginning. What more could you ask for in a recipe really, other than a full tummy and a great place to start tinkering. THANKS!

Crust for Veggie Pot Pie

Easy, simple. Came out flaky, just like I wanted. I did prick the bottom with a fork and throw it in the oven for 5 min (425) by itself before loading with pot pie. I can't say how much it helped, but the bottom wasn't the least bit soggy. (Once I filled it, I brought the heat down to 400 and cooked for 30 min with foil on the edges, 30 min without). THANKS! I will use this instead of buying for sure. EDIT: I've used this a second time, prebaking the bottom, and then just putting the top on without foil for 30 min, watching until it browned up. Fantastic!

Spicy Slow Cooker Black Bean Soup

Very good recipe. I threw in a can of rotel, diced red onion, diced green pepper. I think you definitely have to blend half of the soup at the end or it's texture just isn't right. Also - I soaked the beans overnight, but I think a bit of boiling would have been better - like people said. I will make again for sure. Thanks!

Easy Spicy Roasted Potatoes

Very easy to do, potatoes were creamy on the inside. The chili powder was really the genius here, giving a great hidden bump in flavor without really taking it to a spicy level. My kids all loved it, and we'll make again since we've always got some extra potatoes around.

Sweet Potato Pie I

Really great pie! I never got the knife to come out clean but my father in law, who is a baker, told me that I can just "jiggle" it and see if it all moves as a unit. Then it's good to go! Thanks for the recipe!

Steakhouse Wheat Bread for the Bread Machine

I thought the flavor on this was truly great. As for the texture, I found this to be helpful: I made the dough in the bread machine (as written it was just too small to bake in my Zoj)... I pulled the dough out with floured hands and formed it into two loaves on parchment paper, placed on my baking sheet. I gave it an ADDITIONAL 30-60 min rise and baked at 325 for 18-24 min.

Italian Bread Using a Bread Machine

Wow! Baked this to finish right on time with my Pasta. It was fabulous! I did 2C of each Bread Flour and AP. I also did what some reviewers said and just used a "rounded" tsp of salt. Dough Cycle on my bread machine, then split and formed onto parchment paper (no corn meal). It's the next day now, and the bread has firmed up just the slightest amount, making it great for a sandwich and dipping in some olive oil. Thanks!

Thai Curry Tofu

Scared by reading the reviews, I held the "seasoned salt" in reserve until I had everything mixed. (I did add a cup of mixed veggies). Then I added Lowry's Seasoned Salt, in portions, to taste. The flavor was nice, certainly NOT strong... but the kids did eat it (no seconds.)
