Pumpkin Pasta

Mmmm, so good.. I used a tablespoon of butter and doubled most of the spices (probably tripled the nutmeg) as per others' suggestions. Served with shells instead of penne so as to really soak up the flavour and it was perfect!

Lentils with Tomatoes

This was AMAZING! I added garlic + spinach and seasoned with cumin, nutmeg, cinnamon, and curry powder. Served over basmati rice and even my picky little brother loved it. :)

Zesty Rice 'N' Bean Casserole

This is a nice base recipe to play with. I added broccoli and used fresh tomatoes instead of canned. I also didn't have any kidney beans, so I substituted chick peas and it was still great! :) The only criticism I might have is that there was slightly too much cheese.

Hearty Layer Salad

This is soo yummy! Especially the dressing, which I sometimes make for use on other salads. I always substitute yogurt for the sour cream (for extra points health-wise) and although it probably is a slightly nicer consistency with the cream, it's still delicious. :)

Easy Avocado Smoothie

I make this all the time when I'm in the mood for something light, but filling- it's delicious and very refreshing! :) The vanilla yogurt can be substituted with the same amount of plain and about a teaspoon of vanilla (pretty obvious, but just thought I'd mention it).

Lentil and Green Collard Soup

This soup was absolutely amazing! All the different flavours complemented each other perfectly. The only thing I would suggest is that the salt content should probably be cut down to one teaspoon or less, as otherwise the recipe is too high in sodium.
