Easy Beef Stroganoff

Ok, I want to start out by saying WOW!!! What a delicious Stroganoff recipe. I am a beginner cook who is trying to move away from boxed dinners for health reasons. This was a perfect alternative to unhealthy hamburger helper. Made this for me and my boyfriend for dinner and by just the smell alone I couldnt keep him out of the pot! I will comment that this takes about an hour to make including prep, as aposed to the suggested 30mins, but well worth the wait. Ive read several stroganoff recipies and I made the following modidications: -1LB ground beef -Cooked beef, onions, and fresh mushrooms all together first then drained fat from the pan - Added all other ingredients after beef was browned and also added 3 beef bouillon cubes, 1/2 TSP of Dijon mustard, 1/2 TSP salt, 1TBSP of minced garlic from the jar. - Cooked on low heat 20min until bouillon cubes dissolved. - Added 1/2 cup sour cream towards the end. The sauce was thick, meaty, and absolutely divine over whole wheat rotiniti noodles. Mmmmmmmmm!

Baked Pork Chops I

Yummy! I've made these twice now, and they are really good! Be sure to read the other reviews and make some of the common modifications. Perfect with mashed potatoes, because the extra sauce in the pan can double as a delicious homemade gravy. All in all, if you want tasty, tender, porky goodness, be sure to give these a try. You wont be disappointed :)

Monterey Chicken Fajitas

Have made this many times, finally getting around to writing my review. These are the yummiest, easiest fajitas I've ever had!! I made these to impress a date, I've made them for friends, I've even tought a college student with not much cooking expierence to make these and everyone always gives two thumbs up. All of the ingredients are things that I always have on hand anyway, so these are awesome when you need to whip something up quick. Love, Love, Love!!

Cowboy Skillet Casserole

This is very good, with some modifications. Only used one red pepper, used 1/2 pack Ortega hot and spicy taco seasoning, used mild chili beans, added frozen corn, and added 1/4 cup Mexican cheese to the corn bread mixture. Had my 8 year old help me make this and she liked helping make it but didnt want to eat it due to the beans.This dish is better when the onions, and peppers are diced fairly small. I will for sure make this again, and again!

Cheesy Ham and Hash Brown Casserole

I have made this dish twice and it is soooooo good. Boyfriend noted that it is a salty dish so we always have toast w/ jelly so the sweetness counter acts the salty. All in all really good, and easy to make.

Baked Ziti IV

Very, very good!! I must say I made this several times and it only gets better and better every time. I have made it with both ground, pork, and ground turkey. I am trying to eat healthier so I used, light ricotta, reduced fat provolone, light sour cream, 150 calorie penne, and seasoned ground turkey. My boyfriend who absolutely won't eat anything "healthy" loved it and went back for more. Even with the substitutions it is still a wonferful dish. I am happy to have found such a versatile dish to add to my repertoire. Delishy :)

Pork Apple Burgers

Made this recipe after reading most of the reviews. I made this for my boyfriend and I, so I used 1 pound of ground pork(4 burgers) and divided the rest of the ingredients in half. Per the reviews I added 1/4 cup of italien bread crumbs to stiffen them up. I also didnt use a grill, instead I pan seared them on a grill pan for 5 minutes per side and then put them in the oven at 425 for 15 minutes. The burgers came out moist and delicious! They were not as sweet as I anticipated, so I think next time I will use a whole apple and add 3 TBSP of teriyaki instead of 2. My boyfriend, who is a plain salted beef burger fan commented "these were good, something different for a change, you should make them again" I for certain want to try these on the grill for a summer cookout. Great, easy, and tasty recipie!!
