Ultimate Green Beans

Reviewed: Jun. 28, 2009
Note: The 2 slices of bacon is a typo, it was originally 2 ounces of slab bacon (although I have used sliced bacon with equally god results as well). Thanks for the reviews!

Toasted Pumpkin Seeds with Sugar and Spice

Reviewed: Oct. 31, 2008
The taste of this salty/sweet treat is even better than kettle corn! These turned out perfect using a compilation of suggestions from other reviews. I had four cups of seeds (three kids, so three jack o'lanterns). I dried the seeds overnight then roasted them in batches at 275 degrees, took about 20 minutes each. I heated 4 T. butter, 4 T. oil, and 8 T. sugar in the skillet. I added the seeds and cooked on high until the sugar was completely melted and the seeds were a little browner. I then tossed them in the spiced sugar mixture which I made with the original proportions except reduced the sugar (I used 8 T., two for each cup of seeds) and added extra cinnamon. I let them cool a little and then put some in a brown bag and took them with me while the kids trick-or-treated. I think it's gonna' be a tradition! Thanks for sharing Jani.

Quinoa and Black Beans

Reviewed: Sep. 11, 2009
I had to omit the onion (mine was rotten when I cut into it) and it still turned out great! This was the second time I made quinoa, I wasn't impressed with the first recipe and I'm glad I gave this one a try! I used a cup of canned corn instead of frozen and only one can of beans (which I rinsed). I think the two cans of beans would have been too much. Thanks for the recipe!

Baked Ziti I

Reviewed: Feb. 17, 2009
I agree with Bayou Gator (most helpful review), don't change anything about this recipe. I know many people are probably use to using ricotta in a recipe like this and that sour cream + provolone may sound weird, BUT after the sour cream and provolone cook together you basically end up with a cheese mixture that looks identical to ricotta (I think the heat curdles the sour cream) but taste tons better. I did use whole wheat penne (no ziti to be found) and light sour cream (Daisy brand, very good and thick sour cream). The next time I make this I am going to add diced pepperoni and brown with the beef and onion. Thanks for the easy recipe!
