Smokey Chipotle Meatloaf

This was the first meatloaf I've ever made and it was just what I was looking for! My hubby even ate it and went back for seconds and he has refused to eat meatloaf for probably 20 years ever since his mom made him eat it cold one time. After reading some reviews I was afraid it might be too spicy for my 2 & 4 year old, so I used 1 chili pepper and 1 tablespoon of the adobo sauce and cut the black pepper back to 1/2 tsp--I actually didn't think it was spicy at all this way. Next time, I will use the whole amount. Can't wait to see if it's better the next day!

Creamy Coconut Cake

Yummy! I used a devils food caked mix. I did use both the cream of coconut (in the mixed drink aisle) and the sweetened condensed milk, but I didn't end up using all of the mixture, maybe 1/3 of it. Also, made my own whipped cream and toasted the coconut. Next time, I plan on drizzling melted chocolate over the toasted coconut and adding some slivered almonds on top. Should taste just like an almond joy that way!

Snow Ice Cream II

Made it last night for the first time and I think this will become a fun tradition in my house! I used 1 cup heavy cream and 1 cup whole milk. Also, I mixed the milk, sugar, and vanilla together before adding the snow. It was great and more importantly fun!

Mmm-Mmm Better Brownies

I thought these were pretty good! I haven't been too impressed with any of the other brownie recipes I've tried, but these were pretty darn good. I cut back on the salt a tiny bit, and I think next time I might try just 1/8 tsp of salt (I use sea salt and it must have a stronger flavor because I'm always finding recipes too salty and I'm not an old lady--I'm 27!) Also, might try butter next time just to see if that improves the recipe. I threw in about 1/2 cup of chocolate chips too! Edited 2/11/12- I made these again with melted butter and 1/8 tsp sea salt and that changes my rating to 5 stars! My husband even thought they were from a box mix. This is a keeper!

Spiced Pumpkin Seeds

I was worried these would taste too much like barbeque but they were great! I followed the recipe exactly but I did sprinkle a little extra sea salt on them after I pulled them out of the oven. I will make them again next year for sure!

Gourmet Caramel Apples

These were yummy! I was able to make 5 medium sized apples. I did not skip the boiling of the apples. I did melt chocolate chips instead of a candy bar and that worked well. And for my third flavor I melted some peanut butter chips and added a little bit of that after the chocolate hardened. Those were my husbands favorite. I also made some with salted peanuts. I just stuck the peanuts on before the chocolate hardened. Those were my favorite. The tart apple, sweet caramel and chocolate, and salty peanuts--Heaven!

Perfect Apple Pie

Too Much Chocolate Cake

OMG this is good! Made a few changes as suggested by others: decreased oil to 1/2 cup; added 1/3 c milk; and used 1 cup of mini chocolate chips instead of 2 cups of regular. Also, made satiny chocolate glaze from this site. This is a keeper for sure!

Carrot Cake III

Wow! I don't even like carrot cake and I couldn't stop eating this one! Made some changes that were suggested by others: used 1 cup white sugar and 1 cup brown sugar; added an extra teaspoon of vanilla and cinnamon. Also, didn't use the frosting recipe, I used one from Barefoot Cantessa instead. The best carrot cake I've ever had!

Fresh Salsa I

Tastes like salsa from a good mexican restaurant! Made 3 batches of this in less than 1 week! I did cut the salt down to 1/2 tsp and added a little fresh lime juice. It is spicy, but not over the top. I will never buy store bought salsa again!

Make-Ahead Spinach Manicotti

I really enjoyed this one! Made a few minor changes: instead of using onion powder and garlic powder I sauteed chopped onion with a little minced garlic in olive oil. Also, added a little red wine and a tiny but of brown sugar to the spaghetti sauce. Plan to make it again! Thanks!

Garlic Brussels Sprouts

Really good! I did not have low sodium chicken broth so I used the regular stuff and left out the additional salt. Also did not think there was a need to use the extra butter at the end. I will make it again for sure! Thanks!

Marinated Pork Chops

Excellent recipe. Made a few minor changes. Used 1/2 c oil and that was plenty. Used 1/4 c reduced sodium soy sauce. Cut the salt down to 1/2 tsp and will probably cut it out completely next time. With all that soy sauce, it's salty enough! Also, used dijon mustard. It's a keeper!

Vegetarian Gravy

This was really good. Probably the best gravy I've ever made. However, I left out the salt--with the soy sauce it was salty enough! Also, didn't use nutritional yeast (didn't have any), and used beef broth instead of vegetable broth (not a vegetarian). Will make again next year!

Aunt Bev's Famous Apple Pie

Really good! The only thing I changed was I made it a dutch apple pie because I don't really like crust that much. I didn't change the filling at all. It was super runny though after 50 minutes at 400 degrees, so I had to let it bake for at least 30 more minutes. Next time I might add more flour to it. Other than that, it was perfect!

S.O.P.P.

This was excellent and went well with scrambled eggs. I used chicken sausage. I would reccomend seasoning the potatoes though. Obviously, salt and pepper but I also used lots of Penzey's Forward spice and that gave the potatoes a great flavor. Also, 15 minutes total cooking time for potatoes??? Maybe if you like them raw...Cooked mine for about 45 minutes and they were perfect.
