Roasted Cauliflower and Leek Soup

This soup was delicious!! Only had one leek and no chervil and there was still tons of flavor in this soup. The temp for roasting the cauliflower should be higher, I had to cook it for a lot longer than 30 minutes at 275, before it got tender. I pureed mine in the blender when the soup was done cooking and it was a wonderful silky thick soup! Perfect for winter!

Sarah's Applesauce

First time making applesauce and my family thought this was delicious. I used four large apples, so I kept the sugar the same (didn't find it too sugary at all), added a little bit more cinnamon. The texture was perfect too!

Kickin' Collard Greens

I love this recipe! The red pepper flakes give it just the right amount of heat/flavor. The broth could be cut back a cup or so, even after simmering it for 45 min, there was still a lot of broth. We like to serve them over brown rice with a protein on the side!

Zucchini Pancakes

I thought these were delicious, especially with the little dollop of sour cream on them! I used more like 1/4 to 1/3 cup of parmesan (as I don't really care for it all that much). My 1 year old loved them as well, though my 4 year old wasn't sold (they were a little too green for her taste). Great and healthy way to use zucchini that you have on hand!

Carrot Zucchini Soup

This soup was delicious (though I made a few alterations). I used three cups of chicken stock in place of the 2 cups water. I used a can of petite diced tomatoes with green chilis, in place of the 1/2 cup tomato (made it really spicy!). I also added 3 cloves of garlic to the sauteed onion/zucchini mixture. Added a little extra salt/pepper than what the recipe called for. I left out the evaporated milk and parsley, and pureed the whole soup when it was done, so it had a great creamy texture. I think I could've gotten my kids to actually eat this (because it was hard to tell what veggies were in it after pureeing) but I made it too spicy. Next time I will probably just use a can of petite diced "garlic" tomatoes.

My Sister's Favorite Potato Salad...Ever

Slow Cooker Texas Pulled Pork

This was fabulous!! I ended up using white wine vinegar (instead of apple cider vinegar) because that was what I had on hand and used a little bit less than the recipe called for. I also added a few more garlic cloves. I think next time I will add a little bit more BBQ sauce to counter the sweetness of the sugar.

Classic Tuna Noodle Casserole

This is good tuna noodle casserole recipe, as long as you tweak it (otherwise I think it would be a very bland standard tuna noodle casserole). I mixed the soup with almost a cup of milk, 1 cup cheddar cheese, some chopped onion, salt and pepper and red pepper flakes before pouring over the noodles and peas. It was nice and creamy and had a little bit of a kick.

Deviled Eggs

These are extremely salty. I think they would be perfect without as much salt though. The next time I make them I am going to start with a 1/4 teaspoon of salt and season it to taste.

Scallop Scampi

This recipe was delicious. I used shrimp instead of scallops, and added minced red pepper to the onions and garlic. I didn't have any parsley, so went without. Best thing I've eaten in awhile!

Creamy Cajun Shrimp Pasta

The sauce was incredibly bland despite being extremely spicy. I only put about half of the cajun seasoning that the recipe called for (per prior suggestions) and the heat would creep up on you after each bite. Yet there wasn't much flavor to the sauce.

Baked Potato Soup V

This soup was amazing! The only modifications I made were to use one 16 oz can of chicken broth in place of two cups of milk, and I also sauteed (in butter) some minced baby carrots with some garlic and then pureed it before adding to the soup.

Meatloaf...a Little Southwest Style

Really good!!! My husband had been complaining that my "Betty Crocker" meatloaf was too dry, so I decided to try this recipe, and it was perfectly juicy! It also seemed plumper than my usual meatloaf. I added garlic and banana pepper (and omitted the salt & celery salt) so mine was nice and spicy!

Potato Salad III

This was my first attempt at making homemade potato salad and it turned out delicious! Like others, I altered the recipe just a tad. I used about 5 lbs of potatoes, one medium green pepper, half of one large red onion, couple of celery stalks, I added 2 tbsp of chopped fresh parsley, used about 1/2 cup of mayo, 1/2 cup of Peppercorn Ranch dressing, and added 2 tbsp. of yellow mustard, and 1 tbsp of white vinegar. It was perfect and I absolutely love the crunch of it!!!

Sweet and Sassy Pork Tenderloin

This recipe was delicious. I didn't have any horseradish so that was omitted from the sauce, I also only put in one and a half tbsp of red wine vinegar and added an extra half tbsp of worcestershire. I had never grilled tenderloin before and it was so juicy...the sauce was a great mix of sweet/spicy!!!
