Frosty Strawberry Squares

This is my family's favorite dessert. We have called it "Strawberry Yum" forever, and it has been a tradition to have it for Mother's Day. I substitute pecans for the walnuts, which gives it a nicer flavor.

Shrimp Salad with Vinaigrette

I substituted 3 Tbl of my homemade pepper jelly for the pimento in this. It got rave reviews from our guests. Much prefer this to the mayonnaise-based shrimp salad.

Zucchini Cheese Garlic Appetizer

This is very tasty, and easy to make. I agree with another reviewer who thought it was bland. It would benefit from some crushed red pepper flakes, I think. I baked it in a cookie sheet, which made it exactly the right thickness for my hors d'oevres.

Bacon Cheddar Deviled Eggs

I loved this recipe, but couldn't help myself from augmenting it. I added a heaping tablespoon of my homemade red pepper jelly, and minced the bacond and shredded cheddar cheese VERY finely. The egg mix went through a large star tip just fine, and I had to hide the eggs from my husband (I was making them for a baby shower).

Hot Pepper Jelly

Best pepper jelly recipe I've tried--everyone who gets this as a gift begs for more. I don't use any green peppers, except the jalapeno, and the mix of yellow, orange and red gives it a fabulous color. I invariably have to use two packages of pectin for it to set at the consistency I like.

Best seafood dish I ever made. Served it to very discriminating guests and everybody raved. I would do one thing differently: Bring to a boil as directed, THEN add the shrimp, cover and turn off the heat. My shrimp became a little tough, following the directons. I also did as another reviewer suggested and substituted additional 1/2 cup white wine instead of the water called for. This one is a definite repeat performance!
