Chocolate Chip Bread I

Oh baby, this is good! I mistakenly used all purpose flour, and it still came out great. I used butter instead of margarine. I had to add about 1/4 c of flour to get the dough the right consistency. Added 1 c of frozen mini semi-sweet chocolate chips at the add-in beep, and they melted a little but maintained their separateness- no hard little chunks, but not "chocolate bread" either! Perfect, just like the picture. I have a T-Fal bread machine, and I used the 2-lb medium crust setting, and it was wonderful. THANK YOU! My son thanks you, and my husband thanks you, and loaf #2 is in the machine right now and I'm sure my in-laws will thank you later!

Chocolate Cornstarch Pudding

This was lovely! I'm trying to cook healthier, less processed things for my family, and this was the perfect alternative to chemical artificial colorings, additives, and preservatives in a box. I stirred the dry ingredients with a whisk while adding the milk, while the pan was on medium heat. When everything looked smooth and clump-free, I increased the heat to high, and it thickened right up before it even came to a boil. I added the butter and vanilla and stirred until it incorporated. I put the pudding in 4 individual serving bowls and put them in the fridge. Half an hour later it had set up to the perfect consistency. It did have the skin on top, I did not cover it, but I like it that way. Husband and 2 teenaged boys said it was great. Thank you for a healthier option!

Zucchini Brownies

Moist, but tasteless. Mouthful of mush. Baked for the full recommended time. Followed exactly for brownies, didn't bother with the frosting. Did NOT find a keeper here.

Forgotten Cookies II

Mom always made these at Christmas, but no matter what I did with her recipe, they always came out sticky on the bottom, gooey in the middle, and I had to reheat them a bit, leading to them being browned. I followed this recipe exactly, it's a tiny bit different than Mom's in the sugar ratio, and they came out PERFECTLY! Make sure no yolk gets in the whites, and beat the heck out of the whites- it takes a long time, even with a hand mixer. Add the sugar VERY slowly...good luck!
