Mom's Zucchini Bread

I actually altered the recipe to fit our eating program (Prevention's Flat Belly). I used Nutri-Flour (in Canada, a blend of whole wheat for baking), use 3/4 c. egg whites in place of eggs, 1 c. unsweetened applesauce in place of veg oil, 1C Splenda Brown Sugar in place of sugar, 2 1/2 c. zucchini, and I upped the nuts... to 3 c. Walnuts - or better yet 1 1/2 Walnuts & 1 1/2 c. chocolate chips ... It is FABULOUS!! I also like orange flavor so add zest of 1 orange. YUM!

Banana Sour Cream Bread

This is one of the BEST loaf/breads I have in my arsenal now. LIke many, I made changes to suit our lifestyle & taste. We eat a certain way and one serving of this bread & a glass of milk or piece of fruit make a meal of us (we eat 4/5 meals, approx 4oo c. each throughout the day. I have calculated each serving to be approx 305cal. 3 loaves @ 10 serves each. 2 tbsp butter + 1/4 c applesauce 1 1/2 C. Br sugar Splenda Bananaa remain the same - 6 16 oz container Fat Free sour cream vanilla, cinnamon, salt, soda - same 4 1/3 c. Nutriblend flour (in Canada - like W.W. pastry flour) 2 C. chopped walnuts 2 C. semisweet Choc Chips (@ 30 servings, the nuts & choc. works out to 2 tbps. per serving, which is exactly what I intended) I put a little cinnamon/sugar mixture on the bottom/ sides of the pans (after coating them with Pam Baking (flour) spray, but I don't find it necessary. This bread is FABULOUS and stands on it's own as a cut above others. Freezes incredibly well and is really moist. Be prepared to let cool (try some :) - cut in to servings and individually wrap w/ seran, freeze and have to eat when you want ... All the best ...

Cranberry Pumpkin Bread

I used Nutriblend Pastry flour instead of white -1/2 c. Br Sugar Splenda (in place of reg sugar) -more Cinnamon (1 1/2 Tsp) -1/3 c unsweetened applesauce (in place of oil) -zest of 1 whole orange -2 1/2 c. chopped walnuts. The rest I kept the same. This recipe freezes REALLY well & my husband has told me it's a KEEPER - I think so too... You certainly don't have to add more nuts like I did, but it works for us. I've seen the applesauce sub for oil on this site and am grateful to eveyone who has made comments regarding it - it works fabulous.

Spiced Pumpkin Seeds

This is my 2nd yr of making this recipe... my husband won't let me make any other recipe now We LOVE theses !! Everyone who tries them loves them !! Word 'spicy' is a bit deceiving - the worcestershire doesn't make them spicy hot, just a nice flavour. Watch the marg/butter, if I have more or less seeds, I use more or less butter/marg mixture, depending - eventually you'll to it without recipe to your taste. We did 4 pumpkins this year -- YUM !!!!!
