Blackened Tuna

Delicious! My wife and I loved it. I would only cook the tuna for 2 minutes on each side however. I followed other reviewers suggestions and decreased the amount of butter. I also spiked our Penzey Cajun Seasoning with extra cayenne pepper and garlic powder. We did not have an issue with too much salt, even though salt was the second ingredient on the list. Highly recommend this recipe. Also note, this will produce a lot of smoke. We had our exhaust fan running on high, but we were still coughing at the end.

Low Sugar Strawberry Rhubarb Crunch

I love low sugar recipes-esp. with fruit! I used my own frozen rhubarb and strawberries from last season and it was delicious. Will definitely make again!

German Spaetzle Dumplings

Delicious. We used the ziploc bag with a hole poked in the corner method to make the Spaetzle. Very tasty. Will definitely make again.

Mocha Icing

Fruit Cookies

These turned out delicious with a few minor adjustments per the other reviewers: 1 banana instead of 2 (still has definite banana flavor), pecans instead of almonds, added some chopped craisins, and added 1/2 c. honey, 1/2 t baking soda, and reduced the oil by 1/8 cup, due to adding honey. Also due to adding honey, I reduced bake temp to 325 and baked for 20 minutes. They look great, held their shape, and were tasty! Will make again.

Sour Milk Spice Cake

I found this to be a tasty, light snack. I did replace the flour with 1 c. of wheat flour and added an extra 1/2 t. of baking soda. I replaced half of the oil with melted butter. I used all the spices I had on hand: cinnamon, nutmeg, cardamom, and ginger and added some chocolate chips as well as the nuts. I immediately made a second batch to share with friends. A GREAT way to use sour milk!

Award Winning Soft Chocolate Chip Cookies

These cookies are soft, but they taste like store-bought cookies. That was the comment I got from everyone to whom I served these cookies. I would not recommend this recipe if you are going for the home baked cookie taste. Aesthetically though, they look beautiful. I just do not like the flavor.
