Amazing Lentils and Kale

This is so easy to make, inexpensive, healthy, and delicious! I did not change anything, and don't believe anything needs to be changed. Will certainly make again, and can forsee this becoming a regular part of our family meal rotation!!!

Shiny Cookie Icing

Easy, easy, easy!!! Exactly what I wanted for my gingerbread men, and I can see many uses for more cookies throughout the year. I did not have corn syrup, so I substituted it with glucose syrup, and it worked great!

Spooky Witches' Fingers

Cookies turned out looking great. Were very easy (and fun) to make. My only complaint is that, after using salted butter plus the added salt in the recipe, the cookie itself was a bit salty. Next time I will make with unsalted butter, or omit the extra salt. But otherwise a fantastic idea!

Flourless Chocolate Cake II

A chocolate lovers dream! So very easy to make, but the end result is so deceptively "complex" - always a hit with everyone who tries it. I like to top mine with a dark chocolate ganache, which adds a nice creamy layer to the top of the cake (as well as a smooth, glassy look). Great with fresh strawberries! This is a recipe I will always come back to.

White Chocolate Cake

One of the stranger cake recipes I have tried (I made cupcakes, and they literally turned into white chocolate volcanoes in my oven), but the end results were very well received. Consistency very much like a pound cake, but soft, moist, and luscious all the same. Even better 2 days later, after the cake had a chance to "condense" further! Not sure I will use this recipe again for cupcakes, but the layer cake turned out beautifully, and with some fresh raspberries and raspberry sauce to garnish it was a perfect slice of cake. My only complaint (and why I didn't rate 5 stars) is that the taste of white chocolate was pretty hidden in the cake, and I would have liked to taste it more (especially because it is a rather expensive and indulgent ingredient here in Denmark.) But all in all a solid recipe.

Fresh Lime Curd

I made this to be a filling inside cupcakes for a cocktail party (Refreshing Limoncello Cake recipe on this site), and it could not have been any better. I did add a touch of green food coloring to it, only to make it stand out against the yellow cake, and it was a perfect tangy surprise as you took the first bite of cupcake. Many compliments and many requests to make it again!

Seven-Minute Pudding

While I make this on the stovetop instead of the microwave, the results are absolutely unbelievable. Smooth, creamy, almost custard-like consistency...it's a new family dessert favorite. Try it with fresh vanilla bean!

White Chili I

Outstanding flavor, amazing consistency - this was a HUGE hit with my family. Served over rice with salty tortilla chips on the side and a fresh baked cornbread. My daughter has declared it her favorite meal, EVER! We have lovingly dubbed it "Tasty Paste," because the melted cheese makes it all ooey-gooey. Will certainly be making this again.

Red Velvet Cake

This cake was a HUGE success for Valentine's Day. I am so glad I tried it. I did use 1 cup oil instead of shortening in the cake (because I didn't have shortening), and I doubled the cocoa powder to 4 T as others have suggested. I also used "no taste red" gel food coloring, (about 1 tsp.) and it worked just fine. The cake turned out moist and soft with just the right amount of flavor and color. The best part, however, was the icing! Be patient, cook the flour/milk slowly, whisking regularly, until it's the consistency of yogurt. You must cook it long enough to get rid of the flour taste. And make sure it is completely cooled before adding it to the butter/sugar (whisk it occasionally as it is cooling to prevent a crusty layer on top). Your patience will be rewarded! I doubled the recipe here to frost a 9" layer cake with thick icing, which was perfect. My family declared it their new "favorite frosting," and my son has already requested it for his birthday (9 months from now!) Thank you so much for this recipe!
