Pasta Pomodoro
Ended up being better than I thought it would. Very tasty. I did change a few things. I used wholegrain pasta instead. I also added red and green peppers with the onion and garlic. Didn't have any white wine so I used white wine vinegar and reduced the balsimic vinegar. Also didn't have any romano tomatoes so I used canned red diced tomatoes. I'm sure it would have been even tastier with fresh tomatoes. I topped with cut up chicken breasts. I also added shredded asiago cheese with the parmesan cheese for topping. Excellent dinner.

Ultimate Twice Baked Potatoes
These were great. I did cook the potatoes in the microwave first to save time and also cooked an extra potatoe to have extra stuffing. Make sure and leave some potatoe meat in the skin when you are spooning out the potatoe meat so that it doesn't loose it's shape while trying to fill. Had extras left over and simply freezed them to have for later.

Awesome and Easy Creamy Corn Casserole
This was good. I did add some jalapenos and some dried red pepper (just a little bit) to give it a kick. Cooked it for 50 minutes instead. My daughter loved it and went for 2 helpings. A great side dish when you want something more than just 'corn'.
