Chocolate Chip Cookie Ice Cream Cake

So yummy! It was literally gone in less than 5 minutes at the BBQ I brought it to. I used oreo's, coffee icecream and mint fudge...whipcream but no cherries. OMG the combo between the mint fudge, coffee and oreos was sooo good. So easy too and hella fun to decorate. One thing though - I'd advise to freeze the cookie layer before adding the fudge layer or else it gets stuck together and won't spread.

Best Ever Irish Soda Bread

I hope everyone enjoys this recipe! This is my mom's recipe and it's pretty hard to beat! This is an authentic Irish-American recipe - that's what we are! My mom passed away in 2013 but she would be so happy knowing her wonderful recipe is being shared :) Can't wait to make this year, enjoy everyone! After you make it, try it lightly toasted smeared with some Irish butter... it's amazing.

Salsa Cheese Boule Dip

This was pretty good...I made it for a surprise birthday party and it was all gone before the birhday girl got there! Everyone loved it though...served best with Frito dips. I think it is so important to use fresh salsa (like pico de gallo)... othere reviewers said it turned out to be pink but this was not the case with pico de gallo...and it's so delicous! I also added onion, plenty of hot sauce, Adobe (really adds to it) and cumin. Turned out bowl-lickin' good *UPDATE - i get requested to make this for EVERY little party, get together, whatever. it is that addicting and good. just kick up the spices when making it and be creative

Lentil Rice and Veggie Bake

mmm... this was so good. I just used what was around the kitchen - carrots, yellow pepper, tomato, bunch of garlic and onion, spinach and canned black beans instead of red. It turned out great!! i used olive oil instead of veggie oil and pasta sauce instead of tomato - i also suggest using more sauce than what is suggested. i also put more spices than what was called for and added cayenne pepper as well as some hot sauce to heat it up. i added mozarella cheese to half of that top and it's great with or without the cheese. yum yum yum.

Raspberry Crumb Cake

SOOOO good. I literally just took it out of the oven about 20 minutes ago, and it is muy bueno. The cake itself is so fluffy and moist.. I didn't have any almonds or mace (used nutmeg like others) and it was still good. I also realized, when it was time to put everything in the pan that I did not have a 13x9 pan... so I used an 8x8 and here's the weird part - it all still fit into the 8x8 (granted it was overflowing somewhat at the top, but not enough to cause any problems). I still would suggest doin the 13x9 because I bet it would taste even better in thinner pieces. One last thing, serve warm with vanilla icecream and you will cream yourself. it is that good.

Easy, especially delicious with handmade crusts. Perfectly sweet even with the low sugar content, really brings out the fruit flavors.

Best Big, Fat, Chewy Chocolate Chip Cookie

WOW. these make some delicious cookies. One suggestion is not to use the full amount of butter.. i mean of course it was good...but maybe a wee bit too buttery (if that's possible). But, TRY THIS RECIPE!! you will not be let down! so wonerful :)

I hope everyone enjoys this recipe! This is my mom's recipe that is pretty hard to beat! Very Irish-American authentic - that's what we are! My mom passed away in 2013 but she would be so happy knowing her wonderful recipe is being shared :) For those of you who have an issue with the bread not getting cooked all the way through, I know some people will knead the dough just a little in some excess flour, form into a ball and carve an "X" on the top - this helps it to cook evenly. I've never done that to this bread, nor has my mom, but I'm thinking it would work for this. For us though, we just dump the sticky dough into our favorite bread pan and it comes out perfect! Can't wait to make this year, enjoy everyone!
