Broiled Grouper Parmesan

Reviewed: Feb. 6, 2015
This is delicious! Followed the recipe with some minor changes: I seasoned the grouper with cracked black pepper along with the lemon juice before broiling. Then we added Panko bread crumbs in the cheese mixture (as another reviewer suggested), using the same amount as Parmesan cheese. Tastiest grouper we've ever had. So easy! The splash of hot sauce really gives it a nice flavor. Thank you for this recipe.

Lemon Basmati Rice

Reviewed: Apr. 7, 2014
Delicious! I did not have fresh lemon so as another reviewer did, I used lemon juice (2 T.) and lemon pepper in place of the zest. Also used 1 T. ground ginger instead of fresh and then followed the recipe as written. I served rice with salmon with the brown sugar glaze (recipe on AR) and a fresh salad. Wonderful dinner.

Chicken Breasts Pierre

Reviewed: Jan. 17, 2014
This sounded more promising than it actually turned out to be. It has flavor, but the cooking time is way too long. I only cooked it for 20 minutes in the sauce, not the recommended 35-40 and the chicken came out very dry. I used white wine in place of water, added onion and cut the chili powder down to half as was recommended. As I said, it had flavor but we just didn't like it.

I tweaked this a bit, and used Queso in place of the cheddar to give it a Mexican flavor. Delicious and easy.

Easy Chicken Cutlets with Apples

Reviewed: Dec. 3, 2013
Easy and really tasty! I was looking for a new recipe to use with boneless chicken breasts and this turned out great. Followed recipe as written, except left out the white sugar as suggested by another reviewer. I used gala apples because that's what I had, and they worked fine. Will definitely make this again. The flavors of the sherry and marsala wines and the sweetness of the brown sugar blends really well. Chicken came out so tender and juicy!

Halibut Cheeks with Ginger-Orange Sauce

Reviewed: Sep. 5, 2013
This is really delicious! Recommend doubling the sauce (or more) as it's really good over rice served with the fish. Awesome and easy!

Melt-In-Your-Mouth Meat Loaf

Reviewed: Apr. 18, 2013
This is absolutely delicious. I made a few minor changes, decided to chop the mushrooms instead of slicing. And, like other reviewers, I added garlic to it and cooked it in the oven at 350 for 1 hour 15 minutes. It is moist, tasty and my husband raved about it. I didn't have dry mustard for the sauce, so I used dijon. Turned out great. And as several cooks mentioned here, definitely make double the sauce, it is awesome!

Garlic-Lemon Double Stuffed Chicken

Reviewed: Apr. 10, 2012
Delicious and easy! I was looking for a new recipe for chicken, my husband is less than thrilled when I thaw chicken for dinner. Found this one, had everything on hand so I decided to try it. I made just a few changes: I seasoned the chicken with Montreal Chicken seasoning, then used soft cream cheese instead of sliced. I put a dollop inside each breast, and I used shredded cheddar as was suggested by another cook. And it was also suggested to skip the milk, so I did and instead coated the stuffed breasts in the butter/lemon/garlic and then breaded with panko breadcrumbs and parmesan. Drizzled the rest of the butter/lemon sauce over the chicken and baked. So easy, and so tasty! I put this in my recipe box and will definitely be making this one again.

Tiramisu Layer Cake

Reviewed: Feb. 5, 2012
This cake is OUTSTANDING! I took the advice of others and doubled the Kahlua and made sure to refrigerate it so the frosting could set well. Note: I only found it necessary to whip the heavy cream about 2 1/2 minutes, overwhipping is not a good thing. Also the layers only baked about 12 minutes, not 20. Absolutely FABULOUS!!

Perfect Sesame Chicken

Reviewed: Jan. 9, 2012
This is delicious! I hesitated to try it but after reading all the glowing reviews, decided to give it a whirl. I took the suggestions to cut the sugar in half, and also cut the cornstarch that goes into the sauce in half. I used rice wine vinegar instead of the distilled white vinegar and only had one kind of soy sauce, which I used in both the batter and the sauce. The sauce is awesome. Next time I will add a bit more heat as we like things on the spicy side, but this one's a keeper!

Twice Baked Sweet Potatoes

Reviewed: Mar. 13, 2011
I had eaten twice baked sweet potatoes at a restaurant and loved them, so I thought I'd try to make them for dinner with guests. I found this recipe and since I had all the ingredients on hand, decided to use it. This was absolutely delicious! The vanilla is what makes it so good, I think. Unfortunately I was unable to serve them as twice baked, entirely my fault as I overcooked the potatoes. Experience told me cooking 6 sweet potatoes at 350 degrees wouldn't get done in the time alloted. I cooked them at 425 but left them in too long, which is not a problem for the inside but definitely a problem if you want to use the skins. Skins just fell apart, so I decided to use this recipe and make mashed sweet potatoes, mixing the other ingredients into them. Fabulous! I will make this again, it's easy and got rave reviews! Thank you for sharing this one!

Tasty Sesame Tilapia

Reviewed: Jun. 4, 2009
This was ok, not great. Maybe I should have marinated the fish longer (I used grouper). Took another cook's advice and added thai chili paste and sesame seeds, but wasn't that impressed with flavor. Salty even with the low sodium soy sauce.

Ginger Glazed Mahi Mahi

Reviewed: Feb. 2, 2009
Delicious! I used tilapia and had to use brown sugar as I was out of honey. Added just a touch of chili garlic sauce to give it a kick. Served it with veggies and potstickers, and used the sauce for dipping.

Fried Zucchini

Reviewed: Jan. 24, 2009
I tried this and was pleasantly surprised. I took the suggestion of another reviewer and used a "wash" with milk first before dipping the zucchini in the cornmeal. I also added flour to the cornmeal, which I think made for a better coating. Will try other suggestions next time but we all agreed this one was easy enough and pretty tasty.

Onion Roasted Sweet Potatoes

Reviewed: Jan. 15, 2009
Delicious! I love sweet potatoes and am always looking for different recipes. I have prepared this one many times using gold potatoes (it's on the Lipton Onion Soup box) but never thought about using sweet potatoes! I substituted olive oil as suggested, used one envelope of the onion soup with 2 large sweet potatoes, and also added 2T. brown sugar for carmelization. The potatoes were done in 30 minutes, actually a bit overdone even cooking at 400 degrees. Suggest checking at 25 - 30 minutes. This was great, easy and definitely worth making it again.

Raspberry-Orange Chicken

Reviewed: Oct. 30, 2008
This is yummy! Followed the recipe just as it said (except I used frozen raspberries because I had no fresh ones) and it was delicious. Even my husband who hates chicken loved this. Chicken was moist and tender and the sauce is very, very good. Definitely a keeper!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 29, 2008
After seeing the reviews on this recipe, I couldn't wait to taste it. Even though I followed the recipe to a "t" (except I used the recommendation of another member to increase the garlic). It was the most tasteless chicken, but we agreed the sauce was ok on the pasta I served with it. I threw the recipe away.
