Kingman's Vegan Zucchini Bread

Wow! I am so excited to find a healthier version of zucchini bread. I'm not vegan but I try to cut out alot of extra processed foods. This bread was perfect...super moist on the inside, not too rich or sweet, and the outside just a tad crunchier! I used 1/2 white flour, 1/2 whole wheat flour, 1/2 c sugar and 1 c brown sugar. I added 3 T of flax meal and I also threw in some pecans and raisins. This made 1 big loaf and 14 mini muffins which my kids just loved! Not sure these will last very long, but you bet this will be my go-to recipe now!

Quick Chicken And Wine

My family and I loved this. I, like others, added some seasoned bread crumbs to the parmesan cheese. Make sure not to add too much because you still want most of the flavor to be the cheese. I first dipped the chicken in flour, then egg, then the parmesan cheese mixture. The only other change I made was to add some lemon juice to the wine and this added some great flavor. I liked how you simmer this for 20 minutes. It really made the chicken moist and tender. Served it with egg noodles and some fresh sautéed zucchini. Will definitely be making this again and even for company!

Fast and Delicious Black Bean Soup

This soup is delicious!!! A basic, easy recipe but sooo tasty! I will definitely keep making it. I have been adding one more can of beans because I wanted it thicker, but after reading reviews, I think all I need to do is puree it all together once it's cooked. Otherwise, it's more liquidy and soup-like. We prefer it thicker.

Blueberry Scones

These were delicious! I made them on a whim for a girlfriend I was having over. Our 13 month olds loved them too! I, like others, added an extra 1/4 cup of flour. I also added 1 tsp of cinnamon which added just a little more flavor. Next time, I think I'll add a little lemon zest too! Great recipe! Moist and delicious!

Broccoli-Stuffed Sole

This was delcious! I took suggestions from other reviewers in that I added more seasoning (cayenne, garlic powder, parsley, onion powder) to the stuffing mixture to add more flavor. I also added seasoned bread crumbs to the tops of the fish. During the last 10 minutes of cooking, I stuck it in the broiler to crisp and brown up the top. This made all the difference! My husband loved it too! I will definitely be adding this to my box and will make over and over again.

Smothered Tilapia

This was absolutely delicious! I was unsure how these ingredients would taste on a fish, but my husband and 19 month old both LOVED it! I followed the recipe exactly except used Muenster cheese because that's what I had on hand. Baked at 400 for 20 minutes and it was perfect! This is definitely my new Tilapia recipe! Thank you so much!

Fast Chicken Divan

I really enjoyed this recipe! I made it after my husband requested it because it was a favorite of his growing up. I followed other's suggestions by using fresh chicken breast. I sauteed it with some Lowry's seasoning salt to add some extra flavor. I steamed fresh broccoli. Instead of mayo I used light sour cream, low-fat sharp cheddar, and Campbell's Healthy Request mushroom and chicken soups. All in all, it was delicious. I forgot to add the milk like a previous review recommended, but it still tasted delicious. It wasn't too rich or heavy and just the right creaminess. I'll add the milk next time to see how it differs, but I'll definitely be making this again!!

Goat Cheese and Spinach Turkey Burgers

Wow! I really loved these burgers. I followed the suggestions of others. I sauteed some spinach, onion and fresh garlic together. Then I mixed the meat, sauteed vegetables, some Worceshire sauce, salt, pepper, garlic powder, bread crumbs, 1 egg, and 3.5 oz of HERBED goat cheese. Wow! These were so moist and delicious. Be careful not to overcook them, especially if you are using all white meat/extra lean turkey. I will definitely be making these again. Even my 1 yr old loved them!

Pumpkin Cake II

I was disappointed with this recipe. The cake was definitely moist, but I feel it lacked flavor. I was expecting the cake to taste like pumpkin. It didn't. If I were to make this again, I would use much less oil and add some pumpkin pie spice, cloves, etc.

Pan Sauteed Chicken with Vegetables and Herbs

I decided to make this about an hour and a half before my husband came home. I wanted a new idea for chicken. We both really enjoyed this recipe. I used regular russett potatoes and long carrots and just cut them all up. This recipe is very flavorful. I would probably add a full 2 cups of chicken broth instead of the cup and half to add a little more moisture. But the flavors were great and the cooking time right on. I'll definitely make this again.

Sweet Potato-Turkey Meatloaf

I've found a new meat loaf recipe and my husband loves it. Can't wait to share it with others. The flavor of this meat loaf is simple yet very tasty. I was expecting to taste the sweet potato, but I really didn't. Like other reviewers, I added more breadcrumbs until the consistency was less mushy and also put 1/2 of the ketchup on top instead of in the mix. Next time I make this, I think I will put all of the ketchup in the mix because I would have liked a little more flavor. Then I'll just add a little bit of ketchup on top for the color. Overall, this is a great recipe that I look forward to making again!
