Avocado, Tomato and Mango Salsa

This recipe is always asked for after I serve it. There are so many variations you can make, that you really can't go wrong. If I don't have tomatoes on hand, I add red pepper. I sometimes omit the avacado if mine is overripened. I made the mistake of waiting until the mango was soft a few times, and the recipe appeared mushy. You can use a mango that isn't soft and the taste doesn't change…the salsa looks nicer. My family loves this salsa. We serve it over fish and chicken with rice, with whole wheat tortilla chips, and we've even chopped up lettuce and served it with chicken for a lowcarb dinner. This is a family favorite every summer!

Ultimate Shrimp Scampi

This is a once-a-week meal for us. It's my five year old's favorite and super-easy to make. We serve with whole grain angel hair and toss together with the dish. We sometimes add red and yellow peppers and/or mushrooms. We used imitation butter, and no one can tell the difference. Great recipe!

Braised Balsamic Chicken

Easy and awesome! Used canned tomatoes with balsamic and basil already in them. Everyone at the dinner party cleaned their plates! I served this over brown rice to soak up the juice. Yummy!

Chicken Scampi II

This dish was easy and delicious. To make it healthier, I used Smart Balance and cut the amount in half. I also only used about 2 TBS of oil. I used Whole Grain angel hair, red and yellow peppers, mushrooms, red onion, and white wine as others suggested. I always cook my noodles and toss them with the dish to coat. Served them with steamed broccoli and whole wheat dinner rolls. Was even better the next day!

Yam and Apple Casserole

Used Splenda brown sugar blend and Country Crock instead of the full-fat versions, and it turned out great! My family loved it, and my daughter NEVER eats yams. This is worth the effort to make.

Italian Spaghetti Sauce with Meatballs

I suggest browning the meatballs first, as many of mine fell apart in the sauce. My husband and daughter may have stirred them too roughly when I wasn't looking! The taste was a perfect blend of spices. Used Splenda instead of sugar and added fresh basil. Yummy!

Chicken Breasts with Balsamic Vinegar and Garlic

This was delicious and light. My guests loved it! Served over roasted garlic mashed potatoes, the sauce doubled as a gravy. Looked and tasted gourmet.

Double Tomato Bruschetta

Deserves 15 stars! MAde this several times. EVERY TIME, guests wanted the recipe. Used Whole Grain Baguette and whole slices of fresh mozzarella as a blanket over the tomoto mixture. To die for!!
