Superfast Asparagus

Quick, easy and great tasting! We were looking for something different to do with asparagus and this was a good change. Although it's not terribly creative it is tasty. Added garlic powder and cayenne to fit our tastes. Will make again.

Broccoli with Lemon Butter Sauce

I love this recipe. I've made it a few times but always use fresh broccoli and it comes out great. The combination of spice and lemon is perfect. I will make this often.

Pineapple Chicken Tenders

This is a keeper, only made a couple small changes. Swapped honey for brown sugar (can't eat sugar), included some pepper to the marinade and added pineapple chunks to the skewers with the chicken. Made a couple veggie skewers and rice to accompany the chicken. Great meal. Boyfriend suggested making a glaze of the marinade next time, to brush over the skewers while cooking..would be great.

Kai Kang Dang (Chicken Curry with Coconut Milk)

Not our favorite. I have another coconut curry recipe that we prefer. I did like the frozen vegetables, typically I only use onions and garlic. I used a frozen cauliflower/broccoli mix and it was a good addition. Other than that the dish was bland and just okay.

Hot German Potato Salad III

Halved this recipe and it came out great! I did leave out the sugar, can't eat it and not much of a fan of sweet potato salad. Other than that, made recipe as stated. LOVED it. Boyfriend also said it was a "keeper".

Spaghetti and Chipotle Meatballs

These meatballs are great! Just what I was hoping for. I did make adjustments, based on taste. I used 1lb of ground beef and only 2 chipotle peppers with about 1tsp of sauce. The hamburgers came out really flavorful with a bit of spice. Will definitely make again. thanks!

Blueberry Buckle

Wow! This was great. I did make a couple adjustments, sub'd Splenda for sugar (can't have sugar) and ended up using 1/2 cup extra milk as the batter was WAY thick for me for some reason. Came out fluffy and yummy. Will def make again.

Banana Banana Bread

I made these to make use of some over ripe bananas and it was perfect. They almost taste like a desert. I swapped splenda for sugar but otherwise followed the recipe. Will be making again.

Jalapeno Popper Spread

This is now a family favorite! The only change I made was to reduce the amount of mayo and swap fresh for canned jalapeno. I still used the canned chiles and it was such a hit. I think the next time I make it I will try the other suggestions to use some sour cream, the right balance between mayo and sour cream would probably be perfect. This is a keeper!!

Todd's Famous Blueberry Pancakes

We loved this recipe! I prefer my pancakes to not be super sweet, so this worked well for us. I swapped splenda for sugar and it worked perfectly. I used the remainder of my blueberries to to create a syrup, just cooked them down with a couple tablespoons of butter and honey..YUMM!

Spicy Garlic Lime Chicken

This chicken came out great! The flavor was amazing without being too much. I didn't end up with much "sauce" but ended up adding a little chicken stock, reducing it and serving over steamed carrots. I think it worked out for the better because the chicken didn't need any sauce.

Creamed Spinach III

The sauce was good, the problem was chopping up the spinach in the food processor. It came out way to fine even after just one or two pulses. When I added it to the sauce it just blended in, for additional texture I added steamed whole spinach leaves. I think that if I make it again I'll omit the chopping and mix in whole spinach.

Scalloped Potatoes and Onions

This was great! I have to admit that I was skeptical but the other reviews and easy preperation sold me. I'm glad I tried it..these flew out of the pan..no left overs of this! I have to admit that I threw some grated cheese in between the layers because I was scared that they wouldn't be cheesy enough for my family..It came out great but I think it would have been great without the added cheese.

Roasted Beets and Sauteed Beet Greens

The beets came out fine. Although I eat them often this is the first time I have roasted them. The flavor was good and it was nice to be able to throw them in the oven while I worked on the rest of the dish but I didn't think they had an exceptionally different flavor than the way I typically cook them. The greens were fine, just nothing special.

Green Salad with Cranberry Vinaigrette

This was a great dressing! It grabbed my attention because I had all the ingredients on hand, although I only had dried cranberries..it came out great! I did reduce the amount of oil just based on my personal taste. So good that there wasn't enough for everyone at Christmas dinner.

Enchilada Sauce

This recipe is the BEST! Family will literally drive from hours away when I make this enchilada sauce. I discovered it over 5 years ago and have never made or used another red sauce. It is a bit time consuming but SO worth every minute. Only complaint is that it goes so quickly once everyone starts eating! I make nearly exactly how the recipes instructs, maybe not using as much fluid, depending on the batch, and it comes out perfectly. I notice others discussing the consistency but I haven't had any trouble with that.

Best Ever Meatloaf I

Although we don't eat meatloaf often this is the recipe I have gone to for years! It is the perfect texture and flavor. I choose to add more onions than called for because I like the taste and texture.
