Iced Pumpkin Cookies

I really liked the texture of these cookies. They were light yet very satisfying. I added a bit more cinnamon and nutmeg for more flavor. I would prefer a cream cheese frosting, but overall they went over very well. I doubled the batch and half of them were gone in one day.

Awesome Slow Cooker Pot Roast

My husband and I LOVED this recipe. I had used a smaller roast and so I used one packet of beefy onion soup mix and one can of condensed garlic mushroom soup and then added half a can of water and a couple garlic cloves. The gravy was delicious. I served it with red skinned smashed garlic potatoes. It was one of those meals that looked and tasted like you slaved all day, but really only took twenty minutes.

Pumpkin Turkey Chili

This chili is awesome. I used ground beef instead of turkey, and added about a cup of beef broth and a can of corn to it. I also doubled the amount of seasoning and added red pepper flakes for some heat.The texture was really great though, and the pumpkin added a smooth, mild flavor.

Pumpkin-Apple Muffins with Streusel Topping

I really liked this recipe. They were very moist, and the apples complement the pumpkin very well. They are also very versatile. You could easily make them healthier, you could substitute the pumpkin for bananas and play around with all sorts of fruits and nuts. The only thing I would warn about is that the batter is very thick. The first time I made them I really thought that I hadn't gotten the measurements right because the batter looked so thick. But they turned out delicious.

Apple Crisp IV

This was not the best recipe. It definitely has too much butter. I used 1 1/2 cups of flour and about 2 1/2 cups of oats and I think that is what made it edible. With that much butter, it was greasy and instead of being slightly crumbly it became doughy. If I try it again I will probably use half the butter.

Easy Peach Cobbler

A very easy recipe. However I added cinnamon (about a teaspoon) and a dash of nutmeg. It also took about an hour to bake. I also think that it would have been better with more peaches. But overall it turned out pretty well. I topped it with powdered sugar and served with vanilla ice cream.

Peanut Butter Chip Chocolate Cookies

These cookies are wonderful! I think they are the best cookies we have ever had. They are slightly crisp on the outside and gooey on the inside. No tweaking is necessary. This recipe is perfect!!!

Oatmeal Pie II

This was the first time I have ever eaten or baked an oatmeal pie, but my husband loves them so I decided to give it a shot for Thanksgiving. It turned out very well and was super easy to make. Some people really liked it, some hated it. It does taste similar to pecan pie, and I thought it was good served with whipped cream.

Peanut Butter and Pumpkin Dog Treats

These are so cute! I cut them into miniature gingerbread men shapes. I used about 15 oz of pumpkin, 3 huge tablespoons of peanut butter (my puppies LOVE peanut butter), and I added about 2 tablespoons of molasses, 1/2 cup of instant oats and about 2 tablespoons of ground flax seeds. It ended up making ALOT of puppy treats, so that's what my puppies are giving to their friends for Christmas! Thanks for the recipe!

Cream Cheese Sugar Cookies

These were REALLY good. The only change I made was using 8oz of cream cheese and increasing the flour a bit. I used the Butter Icing for Sugar Cookies on this site to ice them. The cookies were soft and flavorful unlike some sugar cookie recipes that are dry and floury.

Butter Icing for Sugar Cookies

This is really good. I used 2 tablespoons of butter and about one tablespoon of cream cheese. I also threw in a teaspoon or so of marshmallow fluff. It was smooth and creamy, yet hardened just enough to coat my sugar cookies well. I used it on the Cream Cheese Sugar Cookies on this site.

Caramel Shortbread Squares

Oh my God, these are soooo good. The only changes I made were using semi-sweet chocolate chips and dark corn syrup (That's all I had on hand) and they turned out amazing! I did cool each layer before putting on the next and I used a double boiler for the chocolate. They are SUPER easy and delicious. I think everyone should try them. Thanks for the recipe!

Roasted Garlic

I used method two, and roasted about eight cloves. I sprinkled them with some salt and pepper, and they turned out great after about twenty minutes. I put them in mashed potatoes and threw a few cloves into my meatloaf. Yum! Thanks for the recipe!

Special Buttercream Frosting

This was the best frosting I have ever made! I did use 1 cup of butter in place of 1 of the cups of shortening. I also added 1 teaspoon each of vanilla, almond and butter extracts, which I highly recommend adding to any frosting recipe. It held up really well for piping (I actually did a basketweave pattern). It has great consistency and a wonderful taste. Everyone should try it!

Lemon Filling

This was a very tasty filling. I used it in an Easter cake which had a strawberry cake layer and two confetti cake layers. I used this filling in between one layer and a stawberry filling in between the other layer. I frosted the cake with Special Buttercream Frosting from this site. It turned out really nicely. Very nice for spring time because it's not heavy at all. Not a crumb was left over. I also think it would be nice with angel food cake. Thanks for the recipe.

Easy Pancakes

I used two teaspoons of baking powder instead of two tablespoons, but other than that, I followed the recipe exactly, and it was great. I like that I always have those ingredients on hand, so it is a quick easy meal.
