Colleen's Slow Cooker Jambalaya

We served this at a New Orleans Saints Super Bowl party. It was easy to make and everyone loved it. I add extra vegetables to any dish whenever I can and with this recipe you can easily add more peppers, onions, and celery; for these items I did about 1.5x what the recipe asked for. The spices seemed to be the right amount; you could taste it and know it's there yet it wasn't too spicy. There have been several conflicting reviews on this recipe regarding "spiciness." This makes me think it's more related to which andouille you choose rather than the actual spices in the dish. Also, some people have said this recipe was too watery; even with the added vegetables. We found the consistency to be excellent for placing over rice. The jambalaya did cook much more quickly than I was expecting. It was done after about 4 hours on low.

Bananas Foster II

This recipe was great. I haven't had Bananas Foster before, but it will be a regular at our home now. It's easy to make yet it really impresses the guests. Highly recommended. :)

Southern as You Can Get Collard Greens

These collards were excellent. There were people at our house who said they usually don't like greens and they really enjoyed these. I added a little brown sugar as some have suggested. This will definitely be our "go-to" recipe for collard greens.

Chocolate Zucchini Bread I

I brought this to work and everyone loved it. I used half whole wheat flour and I think that with all the chocolate, oil, and sugar you could even use all whole wheat flour if you want. I put in a little extra zucchini (these quick breads always seem able to handle more veggie or fruit if you have it). The chocolate chips do tend to get to the bottom, but it's okay.

Pineapple Banana Bread

The pineapples helped to make this bread very moist...in fact, when I ate it I was worried I had undercooked it, but it was just the moist pineapple. For my quick breads I always add about half whole wheat flour and this time I added a little oatmeal, too. Oatmeal adds a good texture.
