Hawaiian Ham Bake

My family enjoyed this recipe very much. I made a few modifications: I added 3 garlic cloves, minced; subbed in dried cranberries for the raisins; I only put in 4 tbsp. of soy sauce, but then added 2 tbsp of fish sauce;I reduced the apple cider vinegar to 1/4 cup and put in 1/4 cup cooking sherry; and I used broccoli instead of peppers (I want to try the peppers, I just was out when I made this dish). Next time I make it I will reduce the amount of brown sugar. It was a touch too sweet, and with the pineapple juice and fruit, a reduction of sugar would be nice I think. It's a great dish to make ahead of time.

Golden Sweet Cornbread

This cornbread recipe rocks!!! I make it all the time. I make a few modifications: I use brown sugar instead of white, and reduce measurement to to 1/2 cup; I sub in wheat free flours for the all purpose, due to wheat issues; I use olive oil instead of regular vegetable oil and sometimes I halve the oil measurement and put in some applesauce; I use vanilla soy milk instead of regular milk. It's great with chili, for breakfast,or a nutritious snack.

Meg's Chocolate Chip Oatmeal Cookies

This recipe is pretty darn good. I made the cookies without using any wheat flour. Instead, for the two cups of flour I subbed in 3/4 cup garbanzo bean flour, 3/4 cup spelt flour and 1/2 cup white rice flour. I put in 1 tsp. baking powder instead of the 1/2 tsp. of baking soda, so they would raise nicely. Not using wheat flour can effect how much the baked good raises. I reduced the sugar by 1/3 cup, too, and with all the chocolate-y goodness, I thought the cookies were plenty sweet.

Dave's Mocha Chicken

I modified the recipe somewhat, per the reviews I read. I added minced garlic, 2 tablespoons powdered dutch cocoa and about 1/2 tsp cayenne. I thickened the sauce with a water, cornstarch mixture before serving. I reduced the brown sugar by half, I reduced the soy sauce to 1/8th cup and added less than 1/8th cup of fish sauce to make about 1/4 cup. I used boneless, skinless chicken breast instead of drumsticks. I kept the olive oil, brewed coffee and sherry the same. Next time I make it, I'll reduce the amount of olive oil. Even with cooking a leaner type of chicken with no skin, the oil floated to the top of the sauce. I skimmed what I could off. The chicken and sauce have a wonderful, complex favor. A definite keeper recipe. It's ripe for modification-- maybe a little more cayenne next time, or a double shot of brewed espresso, or sub in fresh pineapple juice for some of the brown sugar, try some pork instead of chicken. I served the chicken and sauce over brown rice, with a little bit of sauteed crimini mushrooms on top and steamed broccoli/ cauliflower as a side dish.

Spiced Plum Pork Chops

Flavor packed recipe and what an easy dish to prepare. The crock pot does all the hard work! I read the other reviewers comments about the liquid and decided to use 1 cup of pineapple juice. I also added 1 tbsp of marsala wine with the balsamic vinegar. At the mid point, I added one small onion, chopped and toward the end of the cooking time I added three minced garlic cloves. I also used fresh ginger instead of powdered. The pork chops melted in our mouths, it was so tender! And we have enough left over to do something like pulled pork sandwiches, like another reviewer wrote about. Yum!

Italian Chicken Sausage Risotto

I LOVE this recipe. I change up the wine-- I add 3/4 good Marsala instead of 1 cup of white wine. Incredible flavor.

Gluten Free Banana Bread

Terrific recipe. I did not have 6 ripe bananas (only 4) so I added some fresh, sliced strawberries to the mix. I also added 1 tsp cinnamon, 1/2 tsp clove and nutmeg, and 1 tsp vanilla. Very easy to make.
