White Chili

Reviewed: Apr. 5, 2015
The flavor was great the day I made it, but when I ate leftovers a day or two later, it really had a distinctive Pace Picante Sauce flavor. I like PPS, but not at the main flavor in a bowl of chili. So I would use less of that next time. I also had a problem with the cheese clumping like some others have mentioned. I read afterwards that that can happen when the soup/chili is too hot when I add the cheese. I'm sure that's what did wrong, so I'll fix that the next time. Will fix this again!

Special Irish Beef Stew

Reviewed: Mar. 18, 2015
This had a really good flavor to it. I chose this recipe from all the other Irish stews because it could be made in 2 hours. The meat was just as tender, and the flavors were melded even though it only cooks for an hour or so. I used a lighter beer than a stout and added a little sugar, since I didn't think my family would like a stronger beer flavor. But you definitely need some kind of beer in this recipe. I also left out the potatoes, because I made this on St. Patrick's Day, and we always have green mashed potatoes on St. Patrick's Day ;)

Tex-Mex Corn Chowder

Reviewed: Feb. 20, 2014
Excellent! I followed the recipe pretty closely. I only used 1 cup of salsa, because that was all I had left, and the flavor was great! I used light cream cheese, which blended in just fine. I also added a larger can of canned chicken, which seemed to be a good amount. Love having this quick and easy recipe on hand now!

Tasty Roasted Beets

Reviewed: Jun. 19, 2013
Yummy! Got some beets in a CSA and didn't know what to do with them. This was so simple and converted a whole family who had never had/didn't like beets. We just quartered them, because ours were so small. The MAIN thing is that we LEFT THE SKINS ON.... and they were GOOD! The skin added a crunchy texture; it was a lot like a potato skin. I will definitely keep doing them this way. I might experiment with the seasonings just for fun, but the thyme + sea salt was very good.

Slow Cooker Butter Chicken

Reviewed: Apr. 15, 2013
I followed the recipe as is, and it was bland. It didn't have a lot of flavor or spice. The overriding flavor was tomato. I tried to add extra curry paste towards the end once I knew it wasn't turing out as I had hoped, but that didn't save it. I was hoping for something more restaurant quality, and this wasn't it. This wasn't even a good base recipe, because there wasn't even enough flavor to build on. I'm going to keep searching for a better recipe.

American Shepherd's Pie

Reviewed: Mar. 5, 2013
Very easy version of Shepherd's Pie, which is just what I was looking for. I followed the recipe as written, except that I also added some leftover corn and green beans I had in the fridge. It's a good 'cleaning out the fridge' meal!

Sweet and Sour Chicken Tenders

Reviewed: Mar. 3, 2013
Excellent! The chicken tenders were extremely tender on the inside, crunchy on the outside, perfect. The sauce was fantastic too; it caramelized very nicely and had great flavor and consistency. This dish was even better than carryout. I used half the amount of vinegar based on other reviews, and I omitted the extra salt on accident - which I'll omit next time I make this because it was just fine. I also used garlic powder instead of garlic salt because it was what I had on hand. This will definitely become part of our regular dinner rotation!

Black Bean and Corn Salad I

Reviewed: Dec. 31, 2012
I served this to a bunch of high schoolers (and a few chaperones) and it was a big hit! I got several compliments. However, I added a LOT more seasoning than what the recipe called for- specifically more pepper, cayenne, balsamic, and a whole lot more of the cumin. I kept adding until I thought it tasted right. I tried roasting the corn ahead of time like someone else suggested, but I won't do that again. I personally like the fresh taste better, and it certainly didn't add enough to the dish to be worth the trouble of this extra pre-step. I left out the chopped onion, only because I was serving it to a group that might not have wanted raw onion breath at their special event. I will definitely do this recipe again, with the added flavorings.

Strawberry Jam

Reviewed: Aug. 29, 2012
This was my first time making any kind of jam or jelly and it was a big hit! I didn't know what the author meant when she said to "process" but the 2 most recent reviews helped me with that :) Jam turned out perfectly and everyone loved it.

Pecan Pie

Reviewed: Dec. 21, 2011
I didn't have any problems with this pie, and I'm not an experienced pecan pie baker. Very nice texture and flavor! I followed the advice of leaving it in the turned off oven for about 20 minutes. I was worried that it still jiggled too much even then, but my husband told me that pecan pies will firm up after cooling. He was right and the pie was the perfect consistency!

Fruity Curry Chicken Salad

Reviewed: Dec. 14, 2009
Add me to list of people who served it and got multiple requests for the recipe! I did dried cranberries instead of golden raisins since it was for a holiday party. I then left out the apple just because the cranberries seemed to add enough fruitiness with the grapes. I didn't really measure the mayonnaise, just added to taste. Thanks for a yummy chicken salad!

Savory Deviled Eggs

Reviewed: Apr. 3, 2009
I was looking for an updated version of deviled eggs to serve at a retro party. These were a huge hit! I chose this recipe because I don't like mustard, and this had less than many recipes. These eggs ran out quickly at my party and I got lots of great comments about them. I was just sorry I didn't make more!

Simmered Smoked Links

Reviewed: Apr. 3, 2009
Yum! I did this recipe exactly as written and it was a huge hit at a party! I used to just use bottled barbeque sauce when serving little sausages, but never again. This is well worth the little bit of extra effort!

Chocolate Banana Smoothie

Reviewed: Apr. 3, 2009
Chocolate taste in a smoothie isn't for everyone. I made this for my son who's a 'fruit-reluctant chocaholic.' However, he said it tasted weird with the chocolate mixed with the fruit taste. I'm also a chocaholic (who likes fruit too) and I agreed with him. I would suggest making one and giving it a taste test before making a huge batch. If you like the combo, it's a good recipe! I may try it again with Nestle powder like someone else suggested, since it's not a sharp as chocolate syrup.
