Pasta Melanzana

Washing and cutting the spinach is the hardest part of this recipe. Really, really easy. I added more butter and olive oil to the eggplant while it was cooking, but that's because I was paranoid it was going to burn. and I LOVED how the color of the spinach seemed to really pop when I added it to the pan. My fiance even told me to move this to the "keep folder", which is quite the compliment. And the best part? start to finish ion about half an hour.

Fast and Easy Turkey Pot Pie

This was one of the easiest things to make, certainly. I made one larger pie pan and one about 8' and I cut the extra crust and lined parts of a cupcake pan for mini pot pies. I think I'll try the next batch completely cupcake size. I used seasoned salt and some creole seasoning (for the pepper blend the recipe calls for) and the pie did have a little zing. I also through in about 1/4 cup of chopped onion just for s & g.

Mexican Bean Pie

Easy as pie! (Pardon the pun). I didn't have chili powder on hand (I know, bonehead move), so I used 2 tbsp smoked chipotle Tabasco. It worked AMAZINGLY. I also used the corn/diced pepper mix and used a red bell pepper, and when I made it the second time (yes, the SECOND TIME), I mixed in chili powder to the shredded cheese before I sprinkled it on, just for an extra kick. Easy, and tasty, especially with a couple of cervesas. (Cervesas optional.) Enjoy!
