Applesauce

I made this with a half-dozen Macintosh apples, added a tsp of lemon juice to the water as I was chopping the apples up to prevent browning, & only used 1.5 tbsp of brown sugar. The apples came apart as I cooked them & only needed to mash them with my rubber spatula to make them nice and lumpy. They were so good my 9-month-old actually ate them instead of flinging them around the kitchen. :)

Shrimp and Quinoa

This recipe was fantastic. Great combination of flavours, quinoa was a great consistency. I might add a bit more seasoning next time, add a handful of fresh basil or more ginger. Leftovers worked well as a chilled salad.

Easy Chicken Enchiladas

I used corn tortillas, Monterey Jack cheese with jalapenos, and threw a diced jalapeno into the filling, and these were amazing. So easy, and they tasted fantastic.

I made this up when I was pregnant and looking to stock the freezer. Assembled everything except the peppers & put it all in a freezer bag. When I cooked it, I added the peppers & baked it in the oven per another reviewer's instructions. It was phenomenal!

Maple Glazed Carrots

This was lovely! I had regular carrots on hand so cut those into thick (1/2-inch) medallions & roasted them. The glaze was lovely. I will definitely be making this again.

Delicious Avocado Egg Salad

Delicious! Like other reviewers, I used 6 eggs & a whole avocado. I used grainy mustard, a pinch of sea salt, and finely diced red pepper. I will definitely make this again.

Spicy Black Bean Soup

Loved this! After reading other commenters, I left out the salt completely, and swapped the ham for spicy Italian sausage (which I had on hand). I used dried beans, so only added the tomatoes after the first hour of cooking. Will definitely make this again!

These were great! Made them exactly as directed. Found they were a teeny bit dry, so added a splash (maybe 2oz) of cream and they were perfect. Will definitely be making these again.
