My favorite things to cook
Trademark family favs are chicken quesidillas, roasted red potatoes, baked sweet potato fries, soups. I make a lot of fish for my husband and myself, so most nights I make 2 dinners; one kid-friendly and one heart healthy!
My favorite family cooking traditions
For Christmas I make beef tenderloin...special treat! I bake lots of goodies for holidays...gingerbread boys, toffee, fudge, Christmas cookies. We always make a gingerbread house for Christmas.
My cooking triumphs
When my guests and family are excited about the meal or dessert! When a new recipe is a big hit...just need to remember to make it again!
My cooking tragedies
Watery mashed potatoes years ago at Christmas! Yuck.

Sweet and Sour Chicken II
Followed others suggestions and used cornstarch instead of flour. I doubled the recipe, added brocolli,and red pepper. I made the sauce on the stovetop, then poured it over the veggies and uncooked chicken strips in the crockpot. Cooked on low 3-4 hours, added pineapple chunks last 1/2 hour. Served over brown rice and was delish! Crowd pleaser and will make again!

Harvest Rice Dish
This recipe is so delicious! I make it just as written, except I chop the onion rather than leave it in strips. I also use a whole container of sliced mushrooms and chop them. The orange zest adds a nice zing.

Tomato Barley Soup
Yummy soup! I used all broth instead of water, and I used one cup of barley. I also zapped the carrots in the microwave for a couple of minutes before adding them, to shorten the cooking time.
