Cream of Sweet Potato Soup

Followed the recipe with a few exceptions: (1) Microwaved the sweet potatoes, (2) used the blender, (3) substituted sour cream for heavy cream. We loved the spicy and sweet combo! Will make again.

Baja Grilled Chicken Wrap

Added cilantro, cumin, and more lime juice. Also, didn't have regular Ranch, so I used Chipotle Ranch. It was pretty tasty, the hubby thought so too.

Zesty Slow Cooker Chicken Barbecue

Good! Made 3 servings instead of 6. Added in chopped onions. I used Stubb's BBQ sauce and Zesty Italian dressing. It turned out to be a bit runny and so I added a tbsp of cornstarch. Great flavor, but a bit mild for our tastes. Not sure what I would add next time to make it bolder, perhaps more BBQ? Besides that, will definitely make again!

Curried Honey Mustard Chicken

Used brown spicy mustard because I did not have dijon. It turned out fine, the taste was pretty good but could have been better. Not sure what I would add next time to make it balanced (was the brown mustard too strong? too much curry? I'm not sure). Anyway, overall it was good and easy to make. Will make again with some more thought and tries, I think it could be 5 stars.

Ramen Cabbage Salad

Very good and easy to make! I used 1/2 package of shredded cabbage and carrots, 2 packets of the chicken flavoring, some green onions, sesame seeds, and used only about 1/4 cup oil. I also did not have plain vinegar, so I used 1 tbsp. rice vinegar (ran out) and 2 tbsp. red wine vinegar. I also added a couple splashes of sesame oil. Topped the salad with marinated spicy szechuan chicken and broccoli. Husband does not usually like cold salads, but he liked this! Will definitely make again!

Perfect Pumpkin Pie

Yummy, will definitely make again! Reminder, check the size of the cans of puree you bought before starting the recipe. I had to run to the store to get more condensed milk once I realized I had doubled the recipe by using the bigger can of pumpkin. Haha.

Spicy Spaghetti Squash

Things I changed: I did not use capers (didn't have any on hand). I put the whole spaghetti squash into the oven at 400 degrees for 60 minutes (it was too difficult to cut in half). I opened it and wasn't completely sure it was soft enough, so I put some olive oil on each half and popped it back in for 15 minutes at 375. The whole dish was so yummy, my husband was pleasantly surprised! Thanks for a great dinner! I will definitely make this again.

Eggplant Parmesan II

Angela's Awesome Enchiladas

This was really delicious! Even the small kids ate it up! The cream of chicken was a wonderful addition to the dish. The only complaint I have is that once I added the cup of water, the chicken mixture was way too soupy. Next time, I would either add a little less water or omit it all together. Otherwise, great meal.

Pot Stickers Traditional

A little effort with nice results! They turned out super yummy and very similar to the ones we buy frozen at the store (but better, of course). I used ground turkey instead of pork and did not cook prior to mixing with the cabbage. Cooked in the oil for about 3-4 minutes, then added 1/2 cup water, covered, and steamed for 10 minutes. Came out perfectly. Keep an eye on the heat level, they can burn pretty easily! I took the advice of another reviewer and made her sauce with soy sauce, sesame oil, rice vinegar, etc. Will definitely make again!!

Pesto Cheesy Chicken Rolls

Very, very yummy and easy! Put salt and pepper on one side of the pounded out chicken breast. On other side, pesto and mozzarella. It was easier than rolling it up and it turned out perfectly after 25 minutes in the oven. I did cover it with foil for the first half of the cooking time, so the mozzarella didn't burn.

Spinach Enchiladas

Yummy! The ricotta made the filling so creamy and wonderful. I added some chopped jalapenos and some cayenne pepper to spice it up. I, also, added a Laughing Cow Garlic and Herb wedge to the mix for more depth of flavor. Definitely will make again!

Spinach Stuffed Chicken Breasts

Most of the filling came out after I had rolled it. Next time I would add the filling in between two chicken fillets and pound the edges to keep them together. Otherwise, I loved it!
