Fast and Friendly Meatballs

This was a great base recipe for me. I added minced white onion, plain bread crumbs, a packet of dry italian salad dressing mix, fresh basil, fresh oregano, fresh thyme, fresh parsley, and some garlic powder. My family LOVED them! We will definitely be making this again.

Tiramisu Layer Cake

Yummy, yummy, yummy! I only gave it four stars though, because it was expensive to buy all the ingredients, and it took a lot of time to make, and I used almost all of my kitchen bowls/measuring cups. The coffee flavor was not quite the same as a traditional Tiramisu, but it was still good. My husband and son LOVED it! They said it was creamy, coffee-y, and really yummy.

Campbell's Kitchen Creamy Chicken Enchiladas

I added black beans, and spanish style rice to the mixture. Really tasted authentic. We all loved the creamy-ness of the recipe. I served them with shredded lettuce, sour cream and avacado slices. Next time I am going to try adding a sauteed onion to the filling.

Marinated Scallops Wrapped in Bacon

Wow, my husband, who would never eat a scallop, said these were great! The only thing I am going to do differently next time is to marinate them overnight. One hour in the marinade didn't do it justice.

Balsamic Roasted Red Potatoes

This was surprisingly tasty, potatoes were cooked perfectly. They really complimented our balsamic/red wine pan roasted chicken. We are going to bring this potatoe recipe to Christmas dinner.

Pecan Pie V

Oatmeal Carmelitas

I used regular flavored instant oatmeal, and 1.25 sticks of softened (not melted) butter, and I baked it for about 20 mins, and it came out PERFECTLY. Right after I took it out of the oven the middle was still a little mushy, but I did let it cool before we cut into it, and the middle had firmed up very nicely. This recipe is FANTASTIC!

Kathy's Delicious Whole Slow Cooker Chicken

I found it extremely difficult to remove the skin of a whole, raw chicken (but I'm still new to cooking.) So, I just pulled most of it off, and left some on that wouldn't budge! I also think I should probably heat up the honey next time before I mix it in, because it was very difficult to get it to blend together with the other ingredients. Also, I think I might have overcooked the chicken, as it was in my slow cooker for almost 11 hours. I rated the recipe very high, though, because the flavors were excellent! I will definitely make this again, but I will be better prepared next time.

Rosemary Lemon Grilled Chicken

I could not believe how tasty this was! My husband and son gobbled it up. Next time, I am going to double the recipe so I will have more sauce to baste with, and then pour overtop of the chicken when it's served. I do not have a food processor, so I used an immersion blender to mix up all the ingredients, and it took a while to get all the fresh rosemary chopped up finely enough to use in a sauce, but it was worth it!

Ground Turkey Noodle Bake

I doubled this recipe by using 6 cups of egg noodles, 1.25 lbs of ground turkey, 1 very large onion, a 29 ounce can of tomato sauce, 1 cup of 2% milk, 8 ounces of cream cheese, 2 tsp of minced garlic, and 2 cups of mozeralla cheese. My husband and my son absolutely loved it. I think I might mix in some ricotta cheese next time I make this; the cream cheese mixture on the egg noodles didn't seem to give it as much thickness/richness as I was expecting. Overall, a very tasty, fulfilling dish.
