Zucchini Brownies

Hubby asked me to make them again... need I say more? I used a little less than a full cup of sugar (raw and brown sugar) which was fine for our tastes. One things I'd change for next time was that I used a food processor instead of a grater... so the pieces were long this strands.. rather than little bits and pieces of zucchini. They were very dense and moist.. good for dunking in a glass of milk! (I didn't make any frosting, and hubby didn't want walnuts in it) (oh, I also ran out of baking soda, so I used 3 tsp baking power and omitted the salt)

Curried Mustard Greens with Kidney Beans

This was very good! I used collard greens because that was what I had.. Very yummy. I was afraid that it would taste a lot like Palak, but it really didn't. It has an Indian flavor, and you could defiantly add Garam Masala, etc, for a more 'authentic' taste, but it's just as good the way it is. Thank you!

Playgroup Granola Bars

Super easy to make, and very tasty! My sisters came over to the house and they both asked for the recipe! I send them to work with hubby when he doesn't have time for breakfast. (I really didn't care for them right after I made them.. but the next day they were so much better... it was probably just me..) Thanks for a really great recipe!

Bean Salad

I'm always on the lookout for new bean recipes, and this one was pretty good. I'm only making meals for two, and I used dry beans, so I cut down the amount of beans by half. I didn't have any salsa, so I chopped up a few tomatoes.. (they weren't overly juicy, so it still seemed slightly lacking in the liquid department.. but that was my fault..) I made a basic pico de gallo as the salsa, (tomatoes, jalapeno, onion, lots and lots of cilantro and garlic). I used the full amount of everything else, and I added half a red pepper, and half a yellow pepper. Hubby said that he liked it a lot, but it was missing 'something'... I think it was salt... because I used dried beans.. I'll probably make it again.. but my recipe box has SOOOO many recipes in it that I want to try... who knows when I'll get around to it.. Thanks for the recipe!

Dill Pickle Soup

a very light soup. I used organic pickles, which have a slightly different taste... I always interrogate hubby about any new recipe I make, and he said he "wouldn't change a thing" (unusual for him). I do agree, it would be really good with rice... mmmm... doesn't really taste of pickles.. Naan would be terrific with this... well, the addition of Naan makes everything better... thanks for a keeper!

Zesty Southern Pasta and Bean Salad

I'm only going to give 4 stars because I did change it a bit... I packed it up for hubby's lunch, so I'll revise the starts if he says he wants me to make it again. I cut the recipe in half because I wasn't sure if we'd want it for leftovers for the next week. I just made it up and served it, without letting it chill and meld for a while, so I'm sure it would have been better. I added a chopped red pepper, and we used cilantro, and squeezed a couple of lime wedges over it. Oh, and I used about twice as much dressing because it seemed a little dry......

Easy Broccoli Quiche

I thought this was pretty good, however, I tried to make my own pie crust.. and it was horrible... to the point where I told hubby he didn't have to eat it.. ... so basically, I ruined it for myself.. but the Quiche itself was pretty yummy. Oh, and my pie dish wasn't deep enough.. so it ran over.. it was a huge mess... hah! Oh well.. live and learn I guess.. Thank you for the recipe, I'm sorry I didn't do it justice ...

Best Ever Banana Bread

I'd never made banana bread before, and this was super easy and very very yummy... I've been afraid to make banana bread because I was afraid that it wouldn't turn out how I wanted.... however, this was great! Very moist and sweet, just the right amount of everything.. Thank you.

Three Bean Soup

Yummy soup! (although I used dry beans and over cooked the kidneys and black beans, and slightly undercooked the pintos... arrrgghhh) This soup is yummy just the way it is... however, I added spices to it anyway.. (hubby is a spice hog.. ;p ) I followed others suggestions and added cumin, chili powder, cayenne, a bay leaf, garlic cloves, oregano, red pepper flakes (also, I didn't have a green bell, so I used an orange, yellow and red bell pepper... topped with cilantro and wedges of lime... and served it with cornbread.. mmmmmm Thanks for a really good recipe.

Slow-Cooker Chicken Tortilla Soup

This is a family favorite. Hubby likes the fact that it's more authentic, and less like chili. I make my own enchilada sauce, which gives it a little bit more kick.

The name made me laugh and I had to try them. Seems they came out perfect. Hubby said they were very rich, and "really big".. So he only had two.. I read that the dough wasn't all that tasty... I know mine was! Oh, I used chocolate chunks. I think I'll be taking them to a baby shower.. Thanks! (edit:) these have become required by hubby for his lunches every day. I add almonds to them, for his taste, and he won't let me run out his favorite cookies!

A-Maize-ing Corn Chowder

Pregnant, and craving corn chowder, it was wonderful, but I couldn't have the left overs... I was sick of it at that point... pretty soon that won't be the case any I'll be able to eat left overs again! Very yummy recipe.

Green Salsa

The shallots from the store were HUGE.. but since I had never used them, I didn't know any better.. I had to make the recipe again without the shallots and combine the two. Hubby liked it a lot. Very fresh, earthy... green tasting... ;p
