Yellow Squash Casserole

Reviewed: Sep. 26, 2009
I absolutely love squash and this recipe is AWESOME! I especially love any recipe that taste good and can be made healthy. Most squash casseroles call for too much butter and cheese...can't keep my weight in-check with those. I followed directions and will make over and over and over again! Thanks so much!!

Key Lime Pie - Low Carb Version

Reviewed: Sep. 26, 2009
I made this for my mother who is on a low-carb diet and loves Key Lime pie. I took others suggestions and omitted 1 pkt of splenda in the crust. The pie tasted like a lime cheesecake to me. My mother said it was not sweet enough for her, which surprised me after everyone said it was too sweet! She also mentioned it a little too thick, but overall a good substitution for those who are craving a Key Lime pie and can't have the carbs. It only made enough crust to cover the bottom of my pie plate and not the sides. Needs some whipped topping on top. I feel other jello flavors would taste just as nice.

Cream Cheese Bars I

Reviewed: Sep. 26, 2009
EXTREMELY easy to make, but are in need of modifications. I made according to recipe...except for replacing 1/2 cup powder sugar (ran out) with brown sugar. I used a yellow cake mix. Based on the ingredients in recipe I give it 3 stars. I agree with other reviews...these are WAY to sweet and bland. I couldn't even really taste much of anything BUT sugar. Definitely take other suggestions and cut out 1 cup sugar or increase cream cheese. Bottom crust is nice, similar to a sugar cookie, buttery & chewy. I will use crust for other deserts. I refrigerated overnight and had no problem cutting. I thought they were plain & boring looking, so I put chocolate on top of a few to liven up the appearance. Baked according to temp and time suggested with no problems. You can tell they are done when the top layer doesn't jiggle.

Lentil Soup III

Reviewed: Aug. 20, 2009
So very simple and satisfying! Thank you for this recipe. My kids don't care for lentils, but were running to the kitchen when they smelt this cooking. I added ham to my soup for extra flavor and all my kids tried a bowl.

Creamy Rice Pudding

Reviewed: Aug. 14, 2009
I love this recipe! Sweet, creamy rice that does not take much effort. My 4 kids could not get enough! I ran out of sugar when making my second time, so I used sweetened condensed milk in substitution of sugar and reduced amount of milk called for. Turned out great! Thanks! UPDATE: You can replace the milk with coconut milk with wonderful results.

Lasagna Alfredo Roll Ups

Reviewed: Feb. 28, 2009
These were a nice meatless change from our normal supper. I took the suggestion of others and put spaghetti sauce on the bottom, then the rolls, cheese and Alfredo sauce. I used an Alfredo recipe of this site that was delicious and made all the difference...can't stand store bought. My kids didn't really like this, but all the adults did. Thanks for the keeper!

Honey Baked Chicken II

Reviewed: Feb. 28, 2009
Oh my gosh! I absolutely loved this and so did my 4 kids. I did take the suggestion of others and used only half the amount of butter, next time I will use even less. I didn't have curry, so I used a near substitution of a mixture of spices. This is a keeper, Thanks!

Soft Oatmeal Cookies

Reviewed: Feb. 28, 2009
I added toffee chips to the batter and my kids just loved them. I felt they were to oily and not as soft as I like. First batch turned out crispy, so on the rest I turned down the heat and only kept in the oven 7 minutes. They were soft, but almost seemed uncooked to get that way. This recipe did make a bunch of cookies, which is good for me with having 4 kids to feed. Probably won't make again unless I take omit some butter and add applesauce.

Quick and Easy Alfredo Sauce

Reviewed: Feb. 17, 2009
I would give this 5 stars in taste, but overall 4 stars for all the fat. So rich and fatty it gave me a slight tummy ache :o( If I make it again this way I will only use half the amount of butter and fat free cream cheese. I'm sure that will be plenty and hopefully won't change the flavor much.

Almost No Fat Banana Bread

Reviewed: Feb. 15, 2009
I could definitely tell it was missing the fat and so could my kids...they wouldn't eat it after a sample taste, but I still liked it well enough to bake again for myself. The bread was a little rubbery...even though I made sure not to over stir and use very ripe bananas.

Favorite Pecan Pie

Reviewed: Jan. 2, 2009
Oh my gosh! The perfect holiday pecan pie!! It is loaded with calories & fat...but well worth it. Keep an eye on your crust to make sure it doesn't burn. I always use an aluminum pie crust cover to achieve a perfect crust. Hope you enjoy!

The Best Rolled Sugar Cookies

Reviewed: Jan. 2, 2009
They rolled out fine, but not as soft as I would like. I kept the dough thick and took them out of the oven before they browned around edges, and they still were not my kind of soft and chewy. The flavor was plain ans sugary, nothing special.

Warm Crab Parmesan Dip

Reviewed: Jan. 2, 2009
This dish was absolutely delicious! Not for those who dislike seafood. I increased the crab amount and added seasoning to achieve the perfect flavor. Several people tasted it before I baked it and liked it better cold. Very rich, you can only handle a few bits.

Baked Cheese Olives

Reviewed: Jan. 2, 2009
The crust was good, but I did not care for the taste of sour green olives with it. No one at the party cared for for them either. I will not make again.

Apple Enchiladas

Reviewed: Jan. 2, 2009
These are awesome! They did not come out chewy, as others have mentioned theirs did, I believe the key is to soak them for 30 min. as stated. I smeared cream cheese on each tortilla before adding apples. Next time I will also sprinkle on some pecans. They are delicious and very sweet. I could only eat 1/2 an enchilada. Would be great with ice cream. Thanks for this great recipe!

Old Fashioned Coconut Cream Pie

Reviewed: Jan. 1, 2009
I made exactly as recipe stated except for the addition of 1 tsp. coconut extract and a little extra coconut, I was pleased, but felt it still needed extra coconut flavor. Due to the holidays all the stores were out of coconut milk, but I will be sure and try this recipe with a can of coconut milk as others recommended. The thickness and texture was just perfect for me. Thanks for the recipe!

Cream Cheese Sugar Cookies

Reviewed: Dec. 15, 2008
I tried this recipe after "The Best Rolled Sugar cookies" were not as tasty and soft as the reviews stated. These turned out great. They are soft, rolled fine after 3 hrs. chilled with a dusting of flour or powdered sugar, easy to cut, and did not lose their shape when baked. I did use the 8oz of cream cheese, 3 1/4 cups flour, 1 1/2 cup sugar, 1 tsp. baking powder as suggested by another. I used 1/2 cup of margarine and 1/2 cup of butter to equal the full cup needed. Will make again!

Cherry Salad

Reviewed: Dec. 14, 2008
I had ingredients on hand, so decided to try. It was ok, my children had mixed opinions as well. Very sweet with a strong condensed milk flavor, needs something more - like pineapple, nuts or marshmallows to give it some bulk. I probably will give it one more try with the extra ingredients. I personally would not take this to any special occasion.

Mini Cheesecakes I

Reviewed: Dec. 13, 2008
I followed recipe as directed and was disappointed after so many good reviews. These did not have the texture of a cheesecake to me, not smooth. Maybe I did something wrong?
