Turkey Carcass Soup

Very good. Made as directed. It does need twice the barley. Next time I think I might try it with mushrooms (sauteed) instead of tomatoes. I like the idea of removing the one processed ingredient and keeping it more in the seasonal vegetable theme.

Greek Chicken Kozani

Loved it. Used chicken tenders: since no pre-boiling I used 2 c broth. Only used 1/2 T paprika since I'm not so sure it's "sweet" and was afraid to spice it up to much for the kids (2 and 4 yr). Sort of tastes like French Onion soup. So delicious.

Kalua Pig in a Slow Cooker

Unreal and so easy. I'm not usually a big liquid smoke fan but this is outrageous. I needed it to cook while at work and the 20 hr time didn't pencil out for my schedule. So I cooked my 4.5 lb roast for 5 hr on high first. Came home at lunch to check on it and turn it down to low. It was pretty much done already. But I turned it to low for the next 5 hr. It was just past the point of perfection and beginning to dry out. Another half-hour and it would have been ruined. I am thinking that 10 hr on low would be fine. I'll give it a try next time and update my notes with the results.

Brown Beans

Very good. Just like mom used to make. Added 3 cloves garlic and cooked for 10 hr on low in crock pot. I did not have low-sodium broth. It definitely had enough saltiness. Next time I will omit the 1/2 t salt in soaking unless I have low sodium broth.

Breakfast Cups

Three stars for flavor and 4 stars for practicality. Made this so we could eat them while travelling on a long trip and not have to stop as there are not may option in the first three hours of our route. I just didn't care for that funny flavor of refrigerator dough. Will try again with homemade dough.

Gingery Carrot Salad

Wasn't real crazy about this. Kids tasted it but refused to eat it (3 and 5 yr). I think it has potential if it had more of an asia emphasis - maybe a little sweeter, rice vinegar instead of cider, omit garlic and cumin? Not sure. I will probably try a different recipe altogether next time than trying to modify this.

Sherry Apple Pork Chops

Quite tasty and tender. Had thin chops are less time so browned them, removed from pan, threw the rest of the incredients in, tossed the chops on top, and simmered in the covered pan.

Granny Mabel's Best Bar Cookies

I used 1/2 c wheat flour and 1.5 c white flour, 1 c brown sugar and 1/2 c white sugar, 1 c butter, and needed to bake for 15 minutes on both baking cycles. It was perfect. I have also tried this with jelly filling instead of the chocolate and caramel and it is perfect that way, too.

Ann's Neptune's Delight

Good. Very rich, as expected. I did not have cream so used 2 percent milk and increased flour to 1/3 c and butter to 3 1/2 T. Also, I used uncooked shrimp and cooked the whole thing in a 1.5 quart casserole for 30 min. Thickens as it cools. Came out about the consistency of thick gravy. Husband rarely comments about my cooking but instantly did. Kids (just about to be 2 and 4) ate it but pretty much just ate the shrimp out of it because they love shrimp. Would be great over pasta.

Butternut Squash Fries

Good stuff. Husband liked it too, and he is a picky vegetable eater. They came out on the soft side but definitely not mushy. I was short on time so after tossing in the ziplok with olive oil and salt, I microwaved them for 5 minutes first (the effect of blanching) while my oven was preheating, then drained the liquid and tossed them in a paper towel to remove excess moisture. Then spread on a spray-oiled sheet and backed at recommended temp for about 25 min.

Crazy Chicken Marinade Grilled Chicken

Husband and kids loved it. I thought it was pretty good, so I've scored it in the middle. But I must say, the men gobbled it up. I used 1 t of chili powder instead of 2 T due to my yung'uns (1 yr and 3 yr) tender taste buds. It definitely is an unusual blend of flavors but it works!

Carrot Cake

Not the best ever but good. I would give it 3.5 stars for flavor but I love the moistness of it so leaned to 4 stars. My husband, on the other hand, said it's the best carrot cake he has ever had so there's another reason for 4 stars. I made it exactly as written. I don't care for the texture created by the coconut so I will leave it out next time. Still it seems like something is missing...just can't quite put my finger on it. The frosting is absolutely perfect.

Prawn and Pine Nut Risotto

Well, the rice flavor was great but I wasn't crazy about the flavor combination of the carrots and, especially the black olives. Maybe it would be better with Kalamata olives? I definitely like the idea of spinach and mushroom instead. I agree that a little less butter would probably work fine.

Oatmeal Gems

Mine, too, came out as balls. I made the recipe exactly as written. They are not soft and chewy as I was hoping for, more like soft, a litttle fluffy and sort of dry (even though they were baked to just golden brown on the edges and bottom. To it's credit, the plumpled raisins were much better than firm raisins. With all the thousands of cookie recipes out there, I will try a different recipe next time I want cookies.

Charleston Breakfast Casserole

I've used stuffing mix as recommended by other readers and diced ham in place of bacon to eliminate a step and dirty pan. This is the quickest, simplest breakfast recipe out there and always delivers raves and smiles.

Corned Beef and Cabbage I

I didn't actually make this but nobody else who reviewed it seems to have either. This is the most recipe rewriting I have seen in any review. I read 12 reviews and finally gave up as they all were telling about how they make theirs, not about this recipe. Very disappointing. I am heading back to the pressure cooker instructions for this evening's meal. :-(

Easy Chicken Satay

Fabulous. I didn't have curry powder so used curry paste. I cut it back to 1/2 for the sauce so the kids could eat it. About 1/3 would be just right for them (3 and 5 yr old).
