Braised Balsamic Chicken

I originally gave this recipes 4 stars as written but am upgrading it to 5 with a substitution I discovered. I substituted the canned tomatos for 3 very large roma tomatos (chopped and seeded) and one tablespoon julienned sundried tomatos. I use fresh garlic (minced) and 1/4 c basalmic (use good quality - garbage in, garbage out ya know). I also cooked slowly with the lid off at the end to reduce the liquid and intensify the flavors. It was outrageously good! Oh, and I dice the chicken so it cooks faster. Biggest critics love it: 2 yr old to picky brother-in-law. Try with risotto.

Baked Orange Roughy with Veggies

Super easy, super fast, good flavor and fresh taste. Passed the 2 yr old test (he likes fished if cooked to his liking). I don't like lemon pepper so used a pepper medley instead and didn't have any OJ so used V8 Fusion Peach-Mango juice.

Asian Beef with Snow Peas

Didn't like it at all. I think it's the vinegar component of the sauce. I have rated the recipe as written. However, I will warn you that I added mushrooms and do not recommended them, as they soaked up a lot of the vinegar and tasted very strongly of vinegar. As with another reader, my sauce did not thicken. My 2 yr old wouldn't eat it. I hope I can get him to try them again in the future.

Charleston Breakfast Casserole

I've used stuffing mix as recommended by other readers and diced ham in place of bacon to eliminate a step and dirty pan. This is the quickest, simplest breakfast recipe out there and always delivers raves and smiles.

Mediterranean Salmon

I, too, used 1/4c oil. Still good if you don't have cilantro but outstanding with it. My man raved about it and kids (1 yr and 3 yr) gobbled it up. It is IMPORTANT to use the method described for best results. I've tried just making a marindade of it all and also cooking it in the marinade but neither one approach the flavor you get from following the instructions to the "T".

Pineapple Banana Bread

It was good but not "to die for" good, so gave it 4 stars. Made it as directed but may experiment with the recipe a little in the future. I'd especially like to use less oil without sacrificing moisture. I'll update my comments if I'm successful.

Beef Stroganoff III

Used fresh mushrooms and half a small yellow onion. Tried as directed but even better with left-over steak (tri-tip, whatever). Husband commented several times how good it is and he rarely has any feedback about food.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

Passed the 1 yr and 3 yr old test. Husband thought it good but didn't rave about it. I thought it was very good. I comes out very, very tender: almost falling apart which I like. Used bacon and a touch of cornstarch to thicken.

Eggplant Parmesan II

Outrageous. Best I've ever had anywhere. I sliced them more like between 1/8 and 1/4" and sweated them. Baked the slices at 400 deg for 5 min/side. I think in a covection or electric oven 350 might work but in a gas oven it needs to be hotter.

Grilled Fish Steaks

I thought it was good. My husband thought it was great: commented on it at least 3 times, which is unheard ot. Kids loved it (1 yr and 3 yr). I used fresh basil and dried parsley and cooked on the BBQ grill sealed in a foil packet (with the marinade).

Crazy Chicken Marinade Grilled Chicken

Husband and kids loved it. I thought it was pretty good, so I've scored it in the middle. But I must say, the men gobbled it up. I used 1 t of chili powder instead of 2 T due to my yung'uns (1 yr and 3 yr) tender taste buds. It definitely is an unusual blend of flavors but it works!

Butternut Squash Fries

Good stuff. Husband liked it too, and he is a picky vegetable eater. They came out on the soft side but definitely not mushy. I was short on time so after tossing in the ziplok with olive oil and salt, I microwaved them for 5 minutes first (the effect of blanching) while my oven was preheating, then drained the liquid and tossed them in a paper towel to remove excess moisture. Then spread on a spray-oiled sheet and backed at recommended temp for about 25 min.

Spiced Pumpkin Seeds

I've roasted pumpkins seeds year after year, attacted to them through nostalgia, disappointed by the reality that they just were not that good. These, however, we great! I soaked them in salted water overnight because I couldn't get to them the first day. Don't know if that made any difference or not.
