Fast Salmon with a Ginger Glaze

Family loved it so giving it five starts. It is very flavorful: I would give it four stars since it is a little too powerful for me but I admit the flavors are very good. I have 5 and 7 year old boys so used just 1/2 T chili-garlic paste for fear of being too spicy hot - this was just right...a little warm but not hot. Otherwise made as directed. They (husband included) all loved it.

Bellepepper's Orzo and Wild Rice Salad

Love it. Suggest using 1 c wild rice. I actually used a grain blend called Soo Foo, which is a little peppery so I skipped the pepper. Used champagne vinegar because I had no white balsalmic. Very yummy!

Baron's Blackberry Cobbler

Love it. I really like the topping. I am accustomed to a biscuit-like top. This is more cake-like. More moist and chewy than dry. I really like it. In fact, I made about 3/4 of a recipe and forgot to reduce the amount of topping so I poured the left overs into cupcake paper for snacking. Very good and easy recipe.

Pumpkin Muffins II

It seemed like the recipe called for an aweful lot of sugar. I used 1 3/4 c instead of 2, not wanting to tweak it too much without trying it first. It was good. The spice amounts seemed way excessive, especially for my young boys. I used the cinnamon and salt as written and cut the rest in 1/2. The result was the perfect amount of spice. I used 1/2 applesauce/1/2 oil. UPDATE: I made this again with the same modifications and a crumb top. Super! Made the crumb top using 2/3 cup packed brown sugar 3/4 cup rolled oats 1/2 cup all-purpose flour 1/2 teaspoon ground cinnamon 6 tablespoons butter

Carrot Cake

Not the best ever but good. I would give it 3.5 stars for flavor but I love the moistness of it so leaned to 4 stars. My husband, on the other hand, said it's the best carrot cake he has ever had so there's another reason for 4 stars. I made it exactly as written. I don't care for the texture created by the coconut so I will leave it out next time. Still it seems like something is missing...just can't quite put my finger on it. The frosting is absolutely perfect.

Easier Chicken Marsala

I followed some others' advise and added 1 can cream of mushroom soup and 1 cup marsala wine. It made ample sauce and required no thickening. My husband rarely comments about food (unless he dislikes it!) but did 3 times and even said the sauce was incredible! That's a first. The kids gobbled it up, too. I thought it was good but not the best I have ever had. Easy and yummy.

Mustard Chicken

This was outstanding. So simple and fast. My husband is just beginning an interest in cooking simple things and said "I could even do that" so maybe he will make it next time. I made it exactly as written except I halved the breasts so they would cook faster. Made it with biscuits (as one other reviewer suggested) and a spinach salad. Fast, easy, delicious dinner for all (adults and 4 yr and 6 yr).

Blackberry Cobbler II

Tasty biscuit topping but the berry part was way too sweet for me. Maybe I just had fabulous berries, but next time I will make this with just 1/2 c sugar in the berries. Also, I cook in cast iron a lot but did NOT like it for this recipe. The left over cobbler was completely ruined with the acidic, metal flavors the next day. Next time I will cook this in glass or ceramic.

Quick Chicken Piccata

Delicious. I was craving chicken piccata and in 30 minutes I was satisfied completely. I used 1/8 cup fresh lemon juice and it was quite "lemony" - 1/4 would be too much for my liking. 4 year old said it was the "best chicken I ever cooked". :-)

Easy Chicken Satay

Fabulous. I didn't have curry powder so used curry paste. I cut it back to 1/2 for the sauce so the kids could eat it. About 1/3 would be just right for them (3 and 5 yr old).

Prawn and Pine Nut Risotto

Well, the rice flavor was great but I wasn't crazy about the flavor combination of the carrots and, especially the black olives. Maybe it would be better with Kalamata olives? I definitely like the idea of spinach and mushroom instead. I agree that a little less butter would probably work fine.

Turkey Carcass Soup

Very good. Made as directed. It does need twice the barley. Next time I think I might try it with mushrooms (sauteed) instead of tomatoes. I like the idea of removing the one processed ingredient and keeping it more in the seasonal vegetable theme.

Easy Paella

This is awesome! The rice alone is outrageous! I love rice and could not stop eating it! I used the zest of one lemon instead of two and it was just right. I used mild italian sausage instead of chorizo because that is what I had on hand. I reduced the red pepper to 1/3 tsp and paprika to 1 tsp for the kids' sake (3 & 5 yr old) and it's a good thing I did - the mild sausage was spicy enough for them (though very mild for the parents). Other than that, I used 1 tbsp dried parsley and the rest as directed. Just fabulous!
