About this Cook
My philosophy is that our kids should (operative word) eat what we eat. I see those Kid Cuisine meals in the store. They may be fine on occasion or in a pinch but I know some parents cater to their kid's palates. I don't have time to cook multiple meals and want my family to eat healthy food together. And since I'm doing the work, I want to make sure it's something I like to eat, too. I think meals together are important, eating is a social activity as much as nutriative, and food and eating should be enjoyable. I will comment on my kids' acceptance of recipes whenever I rate one.

BBQ'd marinated flank steak for birthday dinners. Pie a la mode for breakfast (it's a treat, not a regular event). Tuna casserole using jackstraw potatos.

Good stuff. I could not find black eyed peas in our local store so I used black and white beans.

Pumpkin Muffins II
It seemed like the recipe called for an aweful lot of sugar. I used 1 3/4 c instead of 2, not wanting to tweak it too much without trying it first. It was good. The spice amounts seemed way excessive, especially for my young boys. I used the cinnamon and salt as written and cut the rest in 1/2. The result was the perfect amount of spice. I used 1/2 applesauce/1/2 oil. UPDATE: I made this again with the same modifications and a crumb top. Super! Made the crumb top using 2/3 cup packed brown sugar 3/4 cup rolled oats 1/2 cup all-purpose flour 1/2 teaspoon ground cinnamon 6 tablespoons butter

Carrot Cake
Not the best ever but good. I would give it 3.5 stars for flavor but I love the moistness of it so leaned to 4 stars. My husband, on the other hand, said it's the best carrot cake he has ever had so there's another reason for 4 stars. I made it exactly as written. I don't care for the texture created by the coconut so I will leave it out next time. Still it seems like something is missing...just can't quite put my finger on it. The frosting is absolutely perfect.
