Mini Cheesecakes I

very good recipe! I followed recipe as is but did not use the pie filling. I chopped up some fresh fruit and put it on top instead. Very good recipe!

Carrot Cake III

This is the best carrot cake recipe! I have made it three times and received a lot of compliments each time. I made these into cupcakes (makes 24) and reduced the vegetable oil to 1 cup and added about 1/2 a cup of chopped pineapple. SO YUMMY! The chopped pineapple really adds and makes them so moist. Must try!

BBQ Pork for Sandwiches

I used chicken broth instead of beef broth since it was all that I had. I served them with mini dinner rolls to create "mini burger". It still came out great! I made this for superbowl Sunday and it was a hit!

Steamed Lobster Tails

My lobsters came out perfect! Don't be afraid that you'll "undercook" them. I was worried about taking them off the stove after 8 minutes since it seemed like not enough time to me, but they came out great!

Kung Pao Chicken

This came out really good! It was my first time making something Chinese and I thought it came out pretty tasty. I would, however, leave out the vinegar next time. It didn't need the tartness. One thing I must note, it didn't really taste like Kung Pao Chicken. There was a strong sesame flavor. Still good though!
