Salisbury Steak

This was a lot easier than many other recipes out there. Next time, I'm going to double the sauce and increase the amount of French onion soup. The sauce was a little too ketchupy for my taste, and I think the extra onion soup would help cut that flavor down.

Bread Machine Bagels

I just made these for the first time. I did change up the method a bit. Instead of following the recipe directions for forming the bagels, I rolled them out into long ropes and joined them into a circle. This made six good-sized bagels. I then covered them with a towel and let them rise for an hour. They are FABULOUS!! Store-bought bagels are just gluey and sticky, but these are so much less dense and have much better flavor. I ate mine with blueberry cream cheese, but I probably could have eaten it without anything at all!

Hot 'n' Spicy Buffalo Chicken Salad

Mom's Zucchini Bread

This was fabulous! I followed the recipe exactly, but I might try adding chocolate chips or blueberries next time to change it up a bit. I was a bit worried before adding the zucchini that it would be really dry, but the second I started stirring in the zucchini, it became a nice batter. Highly recommended!

Thai Chicken Balls

I don't know if I did something wrong (although it would be a bit difficult because this recipe is so simple), but these were horrible. If it weren't for the cilantro, these wouldn't have had any taste. I even used WAY less cilantro than recommended (probably half) and they had far, far too much in them.

Spicy Chicken Enchiladas

These were great! At first, I was a little leery of the chicken and broccoli rice, but you couldn't taste anything distinctive in the finished product. I only used half a fresh jalapeno and it had a pretty nice kick. These definitely will become a staple in my house. Also, mine made more than enough filling for eight tortillas. I would suggest making sure you have plenty of tortillas when making this just in case.

Rhubarb Dream Bars

This recipe is so easy and tastes great! I've made it several times for family parties, funeral receptions, etc., and everyone LOVES it. In fact, it has become one of the most in-demand desserts at dinners with my husband's family, which is saying something because he comes from a family of great cooks and bakers. Sometimes, if I want to change things up a bit, I add some strawberries and reduce the amount of rhubarb. I've had good luck with 1/2 cup and 1 cup of strawberries (changing the recipe to 3 1/2 cups and 3 cups of rhubarb, repectively).

White Bean Chicken Chili

This was great! I actually just threw everything in my crock pot just to see how it went, and it was the best chili recipe I've found in a long while (and I've tried tons and tons). Next time, I likely will add a second can of beans and maybe some salsa verde. Also, I probably will drain some of the ingredients because it was awfully watery, but still tasted great. In case anyone wants to try it in the crock pot, I just mixed all the ingredients together in the crock pot, laid the chicken breasts on top and cooked on low for about 9 hours. Then, I just shredded the chicken with two forks and served with sour cream.

Pumpkin Chocolate Chip Cookies III

These are sooooo good and turned out really soft (almost too soft to carry, but that doesn't bother me!). Super-easy to make with fairly common ingredients. Great recipe!
