Creamy Baked Ziti

Very easy and very good. The only changes I made was to add a pound of mild Italian sausage that I browned, drained and that is the pot I used to make the sauce in. I did not layer the dish but just added the grated cheese here and there as I spooned it into the dish reserving 1/3 of it for the top. Gently tomato flavor which did not upset my GERD. I can have my Italian and sleep at night too!

Burrito Pie

After reading some of the reviews I did make a couple of small changes. We always substitute ground turkey for ground beef so I did add 1/3 of a pack of salt free taco seasoning to the meat mixture. As I was adding the rest of the ingredients I could smell the spiciness of the dish so I asked hubby to taste test the mix prior to adding the can of chilies. He thought it was spicy enough to I left them out but decided to add a cup of black beans and a cup of corn to help with the texture. I used the 97% fat free ground turkey with a 1/3 of a packet of salt free taco seasoning instead of ground beef, non fat refried beans, all salt free canned goods when possible and low fat cheese. I did also spread the refried beans like cake icing on the tortillas rather than add to the mix. This was awesome and will be added to my list of casseroles!

Awesome Slow Cooker Pot Roast

The gravy from this recipe is awesome! My cut of meat, eh, not so much. Next time I am going to try this with a tri-tip and see if the meat ends up being tender. I have experimented with the recipe and made meatballs, browned them and then added to the gravy and let cook all day. Those were wonderful as well served over noodles.

Pumpkin Ginger Cupcakes

This made the most unusual batter and yes, it does have the tiny flecks of the butter in it until you add the flour as a prior reviewer stated. The consistancy of the batter is almost like a mousse when finished. I just used a 1/3 cup utensil as my scoop and filled the liners that way. So moist and delicate and they filled the house with a wonderful fall smell.

Grandma's Gingersnap Cookies

I have always avoided anything with ginger in it since I have never liked the taste. Well, that has changed with these cookies! These are awesome! Several people at work told me they were "picky" about their Gingersnaps and the look on their faces when they bit into one was priceless. Everyone raved and raved about them and have requested another batch; so much so that one offered to buy the ingredients if I would do the baking!
