Spanakopita II

Phyllo pastry was not as difficult to work with as some reviewers made it to be. We definitely did not make 27 triangles, but perhaps we stuffed our triangles too full! Very filling and very delicious - 45 min was perfect, but waiting for them to cool enough to eat them was torture!

Cocktail Meatballs

Not having chili sauce, we used a substitute of ketchup and spices (not a good idea). In the end, we added half of a bottle of barbecue sauce because it just tasted like cranberries and ketchup. It turned out quite well with French bread with the barbecue sauce!

Mrs. Sigg's Peanut Butter Cookies

Although I have an allergy to peanut butter, I used the soy-butter "tastes just like peanut butter" substitute. These were a bit floury, but satisfied my craving for a soft and crunchy pb cookie!

German Lebkuchen

These Lebkuchen are delicious, but quite a bit of work. The dough was very tempermental but it could have been because I was trying to make little gingerbread-type people out of them. With enough flour and a lot of patience, they came out better on the second try. Royal icing with a little lemon extract was perfect for decorating my little Lebkuchen people!

Pfeffernusse Cookies

I and my entire family love these pfeffernusse. I tried them out last year to make as edible gifts and finally had them down pat by this past Christmas. Taking them out a minute or two early ensures that they stay soft and moist (and don't turn into little rocks). My German oma even said that they were better than the imported pfeffernusse from Germany!

Sky High Yorkshire Pudding

These yorkshire puddings are a hit at home. They are moist and flavourful and go perfectly with any beefy dinner! Watch them carefully so as to not overbake!

Honey Cornbread

This is truly a wonder. I have substituted melted butter for the oil (and had rave reviews from my husband who said he could live off of them) and also substituted 1/3 cup melted butter with 3/4 cup of milk for the heavy cream when I don't have any on hand and it still turns out fabulously. I cook them in a mini-loaf pan (making 12 tiny corn cakes) for 18 minutes and they are fluffy and delicious!

Banana Oat Muffins

These muffins are fabulous. They are possibly my favourite type of muffin to make. Filling and full of fibre, they are also sweet with the chocolate and tasty thanks to the bananas. Don't overmix or overcook otherwise they come out quite dense!

Potato Chips

For what they are - microwaved potato chips - these were fabulous. I found that with a round plate in the microwave, certain chips (the middle ring, not in the centre and not on the outer part of the plate) cooked quicker than the rest... Haven't figured out a way for them to bake evenly without having to remove some then continue cooking the others.

Apple-Cheddar Tossed Salad

Wheat Crackers

These crackers are wonderful for their versatility and flavour. The estimated prep time, however, is much too short as this yield makes more than one cookie sheet of thin crackers, equalling three times the rolling and seasoning etc. These are a hit at parties and go great with spinach-cheese dip!

Todd's Famous Blueberry Pancakes

Unfortunately I don't think you can make them immediately (instead of waiting an hour) as some reviewers have written. We made them about 15 min after mixing, dropping the blueberries on top, and browning them as usual. They didn't cook properly through, were very tough, and weren't fluffy at all. They had a rather chewy texture and weren't flavourful - missing sugar or salt or something. I don't know if I'd try them again even with the one hour wait.
