Banana Sour Cream Bread

I made this today with my extremely overripe bananas. I halved the recipe, and made the following changes- used 1/2 ripe avocado instead of butter, 1 C sugar, 2 eggs, separated and beaten before adding, 3/4 c greek plain yogurt, half wheat/half white flour, added extra cinnamon and I had to put in chocolate chips for my daughter. I also did sugar and cinnamon the outside....I brought a loaf to my husband at work...he texted me- Nothing but....Y U M M Y....and he usually DOES NOT enjoy most of my somewhat healthier version of baked goods....he has no idea I used avocado either...nor do the kids!! GREAT RECIPE

Baked Potato Soup

Yum! I used 4 strips of bacon, 1/4 of a red onion, doubled the broth, used milk instead of half and half ( I didn't have any), 6 small red potatoes with skins on and also used mediteranean basil. It was great. Really flavorful. My husband said it tasted like it came from a can or even a restaurant, and he rarely likes what I make. Will definitely make again!

A-Number-1 Banana Cake

Yum. I love this. I used half whole wheat flour and subbed half the butter for applesauce, I also used Spenda instead of sugar and lessened it by 1/4 C. I made one full muffin tin and a small loaf of bread. Muffins baked for 18 or so minutes. I thought hte bread and the muffins turned out GREAT!

Hot Breakfast Couscous

I thought this was a great healthy breakfast. I love couscous. I added a bit of vanilla and cinnamon and used molasses instead of honey because I was out of it. It turned out really sweet and perfect or my sweet morning breakfast fix!

Apple Coffee Cake

Really good, I also used a springform pan, and poured the dough in alternately with thinly sliced apple slices. I also put the apples in a bag with sugar and cinnamon for about a half an hour and then poured the juice over the apples on the cake, baked for about 55 min, and I found it to be very good. I will make again for company.

Chocolate Chip Pudding Cookies

I don't know how anyone couldn't love these cookies. I make them all the time, well when I make cookies. My whole family loves them. They are the most moist soft cookie I have ever had. I usually use chocolate pudding with chocolate chips or white chips. We like chocolate. Anyway great recipe!!

Grain and Nut Whole Wheat Pancakes

I don't make anything but these when it comes to pancakes anymore. I love them and they are also so filling, you don't have to eat a ton. Love them with fruit or even plain with a little melted butter. YUM!

Health Nut Blueberry Muffins

I make these all the time. I used different fruit in every batch. I love using bananas and almonds together. Also have tried cranberry almond and apple raisin. Always great. I do use applesauce instead of mashed bananas and also all quick oats, as I had no oat bran. Turns out perfect every time!

Cucumber Fruit Salad

Yum, I altered this a little and wow, tastes so good. Good way to get a little bit of veggies in too. I used plain low fat yogurt instead of sour cream, added a couple tsp of brown sugar, a little spenda, cinnamon and also a tiny bit of grape nuts cereal to add some more crunch. Also I suggest peealing the cucumber to take away the vegetable taste. MMmmm love it. I will definetly make it again.

Applesauce Cake

YUM, I really liked this recipe, even made it with whole wheat flour, had a very hearty taste and yet still sweet..Even my husband who normally doesn't eat my "healthy" foods said he would eat it again. We will be keeping it around for my sweet tooth for sure!

Chocolate Peanut Butter Pudding Cookies

I loooove these!! As does my whole family. It is the only cookie recipe I make often. My husband says they are the best. I usually mix up the pudding flavors each time and try different chips too. I love using chocolate pudding with chocolate chips. I also use butterscotch pudding and it almost tastes just like a really moist chocolate chip cookie!! So glad I found this recipe. I have made it over and over, always great!!

Whole Wheat Banana Strawberry Loaf

Yum, really like this, I also subed some applesauce for oil and used half wheat flour and half oat flour. I only cooked for an hour, came out a little brown on the outside, but perfect otherwise. Will make again!!
