Banana Sour Cream Bread
I made this today with my extremely overripe bananas. I halved the recipe, and made the following changes- used 1/2 ripe avocado instead of butter, 1 C sugar, 2 eggs, separated and beaten before adding, 3/4 c greek plain yogurt, half wheat/half white flour, added extra cinnamon and I had to put in chocolate chips for my daughter. I also did sugar and cinnamon the outside....I brought a loaf to my husband at work...he texted me- Nothing but....Y U M M Y....and he usually DOES NOT enjoy most of my somewhat healthier version of baked goods....he has no idea I used avocado either...nor do the kids!! GREAT RECIPE

A-Number-1 Banana Cake
Yum. I love this. I used half whole wheat flour and subbed half the butter for applesauce, I also used Spenda instead of sugar and lessened it by 1/4 C. I made one full muffin tin and a small loaf of bread. Muffins baked for 18 or so minutes. I thought hte bread and the muffins turned out GREAT!

Hot Breakfast Couscous
I thought this was a great healthy breakfast. I love couscous. I added a bit of vanilla and cinnamon and used molasses instead of honey because I was out of it. It turned out really sweet and perfect or my sweet morning breakfast fix!
